Feijoada

This morning we went to the specialty market to pick up the ingredients for Cooking Light's version of feijoada Ingredients 2 cups dried black beans 4 slices applewood-smoked bacon 1 pound boneless pork shoulder (Boston butt), trimmed and cut into 1/2-inch cubes 3/4 teaspoon salt, divided 1/2 teaspoon freshly ground black pepper, divided 3 bone-in beef short ribs, trimmed (about 2 pounds) 3 cups finely chopped onion (about 2 medium) 1 1/4 cups fat-free, lower-sodium chicken broth 4 garlic cloves, minced 1 (9-ounce) smoked ham hock 1 tablespoon white vinegar Preparation 1. Place beans in a small saucepan; cover with cold water. Bring to a boil; cook for 2 minutes. Remove from heat; cover and let stand 1 hour. Drain. 2. Weekly menu ideas

Tonight we are having crockpot feijoada from Cooking Light. It's been cooking with 6 hours now and smells so good. I've been wanting lasagna but now I'm thinking pastitsio instead with a salad I also want to make Carla Hall's cauliflower soup. It was really good. We went to a cooking demo with Carla the day after Valentine's Day. I think I should make chicken to go with it We will be eating some leftovers this week!

Scrabble Sugar Cookie

For my husbands Valentine's treat I made a sugar cookie Scrabble board. Even though I carefully counted out how many lines I needed to draw, I still made a mistake. He liked it anyway and took it to his work where it was completely gone by the end of the day. I used royal icing for the decorating.

Italian Drip Beef Sandwich

This is a Pioneer Woman recipe . I thought it was perfect! I can't wait to make it for people other than just my husband. The recipe had two versions and I made the Italian seasoned version. The only change I made was to eliminate adding the salt her recipe called for. It turned out salty and spicy enough 1 whole Beef Chuck Roast, 2.5 To 4 Pounds 1 can Beef Consomme Or Beef Broth 3 tablespoons Good Seasonings Italian ¼ cup Water ½ of a 16 ounce jar Pepperoncini Peppers, with some of the juice Buttered, Toasted Deli Rolls Provolone cheese Combine first 5 ingredients ingredients in the crockpot and stir together. Bake on low for 6 hours, or until meat is fork-tender and falling apart. Shred meat completely and remove any fat. Slice the cooked peppers into bite sized pieces. Spoon the liquid from the crockpot into individual bowls for dipping. Serve on buttered, toasted rolls. Top with cheese and melt under the broiler if desired.

Lamb Chops

Hello, it's been a while. Happy Valentines Day! I am back on the low iodine diet so many of the same foods as before. I start my radiation next Monday the 21st. One of my meals during the low iodine diet included these lamb chops, roasted fingerling potatoes (even though none are very finger like) and green beans. The lamb chops were cooked on the stove top only. I was tempted to sear and throw them in the oven because they took a long time cooking. It was worth it in the end they tasted amazing! I used lemon juice, olive oil, garlic, rosemary, low iodine salt, pepper to marinate my chops in the fridge. Lamb Chops
