Cajun Chicken Alfredo

  Boyfriend requested pasta for this weekend so I made my cajun chicken alfredo recipe for him!  He had seconds :)  that means he likes it.   Ingredients * 4 (5-ounce) boneless, skinless chicken breasts (I had two chicken breasts that weighed 1.85 lbs)   * 1 cup blackening spice (I used cajun rib rub seasoning) * 2 tablespoons extra-virgin olive oil * 3 tablespoons minced garlic * 1 cup roughly chopped marinated sun-dried tomatoes * 1/4 cup white wine * 3 cups heavy cream * 3/4 cup grated Parmesan * 1 teaspoon sea salt * 1 teaspoon freshly ground black pepper * 1 pound cooked fettuccine * 1/2 cup sliced scallions * Sliced cremini mushrooms Directions Preheat the oven to 350 degrees F. Dredge the chicken breasts in spice and place in a large oven safe skillet over very high heat. Blacken both sides of the chicken and place in the oven for 15 minutes or until internal temperature of chicken reaches 165 degrees F on an instant-read thermometer. Slice in strips on the bias and set aside.

410BBQ

 I follow a lot of food and food trucks on Facebook.  410bbq was going to be in Columbia Thursday, so I planned a walk around the lake and a stop at the truck to grab some dinner.  I couldn't try any sides because of my diet, but there were soooooo many ribs in this box.  It's actually double stacked in there.  They all fell clean off the bone and had tons of smoke.  My co-worker got the ribs with two sides and really liked the coleslaw, but didn't like the tiny portion of baked beans.  

Sushi Q

  I had my annual physical exam and it wasn't great news.  I ended up putting a few things in myfitness pal and veggie sushi came up as low calorie.  This meal also only cost me $14.  I have sweet potato and mixed veggie rolls, miso soup, and the house salad.  It comes with soy sauce and yum yum sauce.  

Chicken tenders in the air fryer

  A Facebook friend recommended putting chicken in the air fryer and I had a covid stash of chicken tenders in the freezer.  I decided to make some chicken salad because I bought celery to make stuffing and had so much leftover!  I like how the chicken got little grill marks.  The chicken salad has lasted me many meals too.  I've had it as a sandwich and also just scooped it with some Triscuits.  

HoCo Brew Hive

 HoCo Brew Hive has been on my list of places to try for a while.  I got the nacho cheesesteak with sweet potato fries.  This was about a $20 meal and not worth it at all.  Wont be going back!

Chicken and Stuffing Casserole

  I don't usually make cream of soup casseroles, but I wanted chicken and stuffing.  This was really easy by Cambell's Soup .   I woke up at 4am to report for snow removal at 5 and still did grocery pick up and made this dinner. Ingredients 2 tablespoons butter 1 medium onion, diced (about 1/2 cup) 1 stalk celery, diced (about 1/2 cup) 1 cup chicken broth This is half a can 3 cup  dry  Pepperidge Farm® Herb Seasoned Stuffing (about 6 ounces) This is half a bag 1 3/4 pounds boneless, skinless chicken breast I used a rotisserie chicken that I diced and salted and peppered 1 can Campbell’s® Condensed Cream of Mushroom Soup  1/3 cup milk 1/4 teaspoon paprika Changes for the future:  add some diced mushrooms to the cream of mushroom soup.  Add some sage seasoning to the stuffing.  People also recommended adding a side of cranberry sauce to really make it feel like the holidays!   Directions: Preheat oven to 400 degrees. Happy Valentines Day

 I did the heart shaped cinnamon rolls with a can of cinnamon rolls that came with icing.  Then the boyfriend took me to Full on Crafts to get a le pilgrim sandwich!  It's a Thanksgiving sandwich with aioli, turkey, stuffing, mashed potatoes, cranberry sauce and a side of hot gravy to dunk it in.  It was filling!

The Matterhorn

  This is the best burger around!  We had an ice storm last Saturday during the day.  We ran to Stained Glass Pub to pick up dinner when it was over.  This burger has bacon, sauteed onion, swiss cheese, and mushrooms.  They cook it perfectly and it's always soft and juicy.  

T Bone

I used up one of my Covid freezer stash steaks and made a T Bone with green beans, sweet potatoes, and mushrooms.    Heat oven to 400 degrees.  I heated a metal skillet on the stovetop with a little olive oil.  I rubbed Montreal Steak Seasoning on both sides of my steak.  I browned each side of the steak for a few minutes.  Then the pan and steak got thrown into the oven.  The sweet potatoes were boiled then mashed with butter, sour cream, salt, pepper, and a drizzle of maple syrup.  I made two small sweet potatoes.  Some chopped pecans would be really good in the potatoes too.  The green beans were tossed with olive oil, salt, and pepper and roasted in the oven.  Mushrooms cooked with butter in a non stick pan.  

Stony Man Coffee and Donut

 I follow a lot of food trucks, but often miss getting to visit them.  Stony Man was in Columbia this week and I got to try the fresh hot donut holes!  I tried french toast and banana cream.  Banana cream was my favorite, but I'm not a syrup person.  Two flavors for $10.  I also ordered an iced tea and it was fabulous.

Breakfast on the go

This is really similar to the paleo granola I used to make except this has some sort of sugar in it.  It's really good and I get almost 4 servings from the bag.    

Mozz Stuffed burger with pesto sauce

I was super tired when I made these and the stuffing of the burger didn't go so well.  One turned out right and one split when cooking.  The timing on the oven potatoes was very off and they were not cooked!  I highly recommend making a mozz stuffed burger and adding this pesto sauce.  My box didn't come with fresh basil.  It was premade pesto and mayo.  I don't like tomatoes so I skipped that part of the recipe.  It was very yummy in the end.  Mozz Stuffed Caprese Burger from Hello Fresh.    

Ground Pork Taquitos

These were really greasy and just tasted like tacos that were made with pork instead of beef.  A little disappointing.  The guac sauce was the highlight.  The Spanish rice did not come with the meal.  Fully loaded pork taquitos from Hello Fresh  

Apple Goat Cheese Walnut flatbread

I have made similar flatbread before and I know fig jam is good so I added my own after I prebaked my flatbreads.  When they are hot the jam just melts right in!  These were amazing.  Some prosciutto would put it over the top.  HomeChef meal kit this time.    

Carnitas bowl

Pulled pork burrito bowls from Hello Fresh .  This was good!  I will probably make it on my own sometime.    

Loaded Potato Soup

 This was loaded baked potato soup from HomeChef .  I loved the crispy prosciutto over regular bacon! Now the directions were pretty off.  The potatoes were far from cooked in whatever cook time they gave, but I managed to cook it longer and added more liquid 'til they were done.
