Home Chef Sriracha Mayo Sesame Chicken

  I made this on St. Patrick's Day.  I wasn't excited about it because it wasn't Irish food.  It was really good and I was happy to eat it the next day for lunch too.  I highly suggest adding this aioli to your recipes.  It would be a good dipper for a lot of things.   Preheat oven to 425 degrees.  Combine broccoli and red peppers with olive oil, salt and pepper.  This recipe came with a lime seasoning blend that was really good.  If you have a lime, try a squeeze on broccoli.  Roast for about 10 minutes (I thought my broccoli was a bit over roasted so maybe cut it down to 8).  After the 8 minutes, push the veggies over and make room for the chicken. Pat chicken dry, top with salt, pepper, sesame seeds.   Bake next to the broccoli for 25 minutes.   Mix soy sauce, sriracha, and mayo together and top the chicken.   Homechef provided little sesame sticks to add crunch to the chicken.  They were a great idea!   Lastly I added some jasmine rice.  Uncle Ben's 90 second rice i

Ham and Cheese Breakfast Croissants

  I like to make these for the beach house!  Easy to pre assemble and glaze and bake when you need them. Ingredients:   Croissants, split Deli Ham, sliced Swiss Cheese, thin sliced 2 tablespoons Dijon Mustard 1 tablespoon Honey 1 tablespoon Brown Sugar Bake at 400 degrees until hot and melty.  Originally put them in at 350 for 10 minutes and they weren't hot enough.

Flank Steak Fajitas

  I did not turn on the grill for this one.  I used the broiler on the flank steak instead.  The marinade burned and smoked!  The meat was okay though!

Homemade Cava like Bowl

  I have brown rice, blue cheese (which was too strong, feta is better), pepperoni, wonton strips, and hummus with Greek dressing.  

Homemade Guacamole

I may have eaten guacamole and chips for dinner once this week :) Ingredients: 2 avocados Lime juice Diced roma tomato Diced onion Chopped cilantro Diced jalapeno Directions: Mash in a bowl and enjoy with some tortilla chips  

Bacon Cheddar Sliders

We made these bacon cheddar sliders last weekend.  They were great!  I ended up freezing them because it makes so many.  This would be great for a party!  We added some bbq sauce after baking and I think it would be good to add some into the beef from the get go.  They reheated really well in the air fryer too.   Ingredients: 1 large package of Hawaiian rolls.  I think mine may have been 24 4 cups shredded cheddar cheese 1 can diced tomatoes with garlic and onion, drained 2 lbs ground beef 24 strips of bacon, crumbled 1 onion, diced 1 tablespoon dijon mustard 1 tablespoon Worcestershire sauce 1 teaspoon salt 1 teaspoon pepper GLAZE 1 cup melted butter, you could use half a cup and I think it'd be fine!   1/4 cup brown sugar 4 teaspoons Worcestershire sauce 2 tablespoons dijon mustard sesame seeds, optional Directions: Preheat oven to 350°.
