Quesadilla

  Heat olive oil in a pan and sautee peppers and onions.  Add cheese to tortilla, top with peppers and onions, add a second tortilla.  Fry in pan.  My quesadilla was really good.  The beans and rice were not.  Super bland!  They were actually from a food truck we visited the day before.  The tacos from the food truck weren't great either.  They really needed a salsa verde or lime crema.  They were a bit dry!  

Ham, bean, and potato soup

 My parents had leftover Easter ham and gave some to me.  I made this low calories ham and bean soup from Taste of Home !  It lasted me a week and I even gave 2 servings to my boyfriend.   Ingredients: diced, cooked ham 2 tablespoons butter chopped onion 2 garlic cloves minced 2 cans of kidney beans 3 cups pho broth 2 cups water 1 potato diced celery diced carrots diced salt black pepper dashes of hot sauce In a large pot, melt butter, and sautee the onions and then add garlic.  Add the rest of the ingredients and bring to a boil.  Cover pot with lid and simmer for at least 30 minutes.  

Smoothies

I have been counting calories for a while now.  Smoothies are one of my favorite breakfasts.  Tons of fruit servings!  Using frozen fruit means I don't have to use any ice. Ingredients: Frozen fruit blend.  I like this tropical one with mango, pineapple, strawberry 1 banana 1 cup plain lowfat yogurt Juice of 1 lemon Splash of milk honey chia seeds  

Happy Easter

  For Easter this year I ordered the beef tenderloin meal for two from Seasons 52.  It came with sweet potatoes, salad, green beens, and the beef tenderloin.  I made my own scalloped potatoes. Ingredients * 1/4 cup chopped onion * 2 tablespoons butter * 2 tablespoons flour * 1 1/4 cups milk * 1 cup grated cheddar cheese * salt and pepper * 2 potatoes, peeled and thinly sliced, not rinsed Directions 1. Preheat oven to 350°F Fry the onion in butter until soft, add flour and whisk in with butter for 2 minutes. 2.Then whisk in the milk and cook (on medium heat) until thick and bubbly. 3.Remove from heat and add 3/4 cup of cheese, stirring until melted; season with salt and pepper. 4.Layer half of potatoes in a small baking dish and sprinkle with salt and pepper. Cover with half of sauce. 5.Layer remaining potato slices on top of sauce and season. Top with remaining sauce and sprinkle with remaining cheese. 6.Bake, covered, for an hour and a half.  Mine takes a long time to cook through and

Spicy chicken sausage orzo soup

This was like a fancy chicken noodle soup.  Chicken broth, carrots, onion, orzo noodles, and spicy chicken sausage.  I felt like it would have been good to throw some celery in there with the carrot and onion.  This came together really fast.

Cheese stuffed pork burgers

 You can never go wrong with the burger meals from these meal delivery boxes.  These were stuffed with pepper jack and the pork was seasoned with southwest spice.  Topped with a little lime sour cream and jalapenos.  

Teriyaki Chicken with Bok Choy

Ingredients: Chicken tenders, diced Bok choy, sliced Teriyaki Sauce Sriracha Sauce Honey Olive oil Salt and Pepper Jasmine Rice Peanuts for garnish Get oil hot in a sautee pan.  Pat chicken dry.  Dice into bite sized pieces.  Season with salt and pepper.  When chicken is cooked through add in teriyaki sauce, sriracha, and a little honey.  Serve over jasmine rice and garnish with peanuts.  

Paella Night- Periodic Table

Periodic Table has paella night.  I got the vegetable paella and bf got the seafood one.  We both had leftovers!    

French Onion Soup

  French Onion Soup 3 large Vidalia Onions, thinly sliced 2 14-ounce cans of beef broth 2 10-ounce cans of beef consomme 1 packet of onion dip mix (Lipton's) 1 loaf of French bread, dice into crouton size Shredded Gruyere cheese Toss onions, broth, consomme, and dip mix in the crockpot.   Cook on high for 4 hours, or low for 8 hours. Ladle soup in serving crocks, toss in the French bread cubes, and top with cheese. Set oven to broil and broil until the cheese is melted and bubbling.  This will only take a minute or so!
