Pioneer Women's 7 can soup

I wanted to like this recipe, but it isn't good and I'm disappointed the Pioneer Woman would even share this.  I did do the addition of ground beef.  I ate this soup once and it made gallons.  I'll be tossing it :(. It lacks flavor and it's just not good.  My taco soup would have been better and would have used a lot of the same cans.   Ingredients: 1 can black beans, undrained 1 can pinto beans, undrained 1 can chili with no beans 1 can corn, undrained 1 can green chili 1 can diced tomatoes with chili, undrained 8 ounces of cubed velveeta cheese

Crockpot Brunswick Stew

We had a funeral last weekend and someone brought over Brunswick Stew.  I had never had it before so I tried it and went home to make my own version. Ingredients: Boneless chicken thighs, 1-2 pounds 1 cup frozen corn, I used Trader Joes roasted corn 1 cup frozen lima beans 1 28-ounce can crushed tomatoes 1 onion, diced 3 cloves garlic, minced 1 cup bbq sauce, I would use something mild and maybe less next time.  I used Baby Ray 3 cups chicken broth 2 tablespoons apple cider vinegar 2 tablespoons Worcestershire sauce 2 tablespoons brown sugar 2 bay leaves 1 teaspoon paprika 1/2 teaspoon cayenne pepper Salt and pepper Directions:  Place everything in the crockpot, cook on high for 4+ hours, pull chicken thighs out and cut on a cutting board, return to the stew.  Serve with bread and butter.  We had sourdough

BBQ chicken flatbread with leftover French onion soup

Naan bread BBQ sauce Mozzarella Red onion, diced pickled jalapeno, diced cooked chicken tenders, diced Oven at 400 degrees for about 10-15 minutes

French Onion Soup

  5 small onions, thinly sliced 2 cans beef broth 2 cans beef consomme 1 packet onion soup mix, or onion dip mix sliced of french bread 1 cup gruyere cheese, shredded Combine onions, broth, consomme, and soup mix in a slow cooker. Cook on high 4 hours. Ladle soup into bowls. Top with pieces of bread and then cheese. Put soup on a baking sheet with foil. Turn broiler to high. Bake soup until cheese has melted and starts to brown

Lasagna Soup

 Package of ground italian sausage, browned 1/2 onion, diced 2 cloves garlic, minced chopped parsley, I used dried 3 cups chicken broth 2 1/2 cups water 2-3 dried bay leaves 2 cups marinara sauce, I use a mushroom spaghetti sauce black pepper broken lasagna noodles Topping: mozzarella cheese 1/2 cup ricotta parmesan cheese parsley fresh basil chiffonade Mix ricotta with parsley and parmesan Heat oil in pan and brown sausage.  Add chopped onion and cook about 3 minutes.  Then add minced garlic.   Add broth, water, parsley, pasta sauce, bow leaves, black pepper, and bring to a boil. Add in broken pasta and boil until cooked through. Divide up soup and top with ricotta mixture, mozzarella, and fresh basil. We serve with garlic bread.

Taco Soup

  I make this so often now.  Just open some cans and you have soup for days!

Stuffed Pepper Soup

  It felt like soup season for a little bit!  The temperatures in the morning were chilly.  Then it got back into the 80s in the afternoons.   Ingredients: 1 lb ground beef or ground turkey 1 diced onion minced garlic cloves, about 3 1 diced red pepper 1 can tomato sauce 1 can of diced tomatoes with green chili (undrained) 2 cups beef broth or chicken broth (more may be needed to make it soupy) Rice or noodles (I had run out of rice) 4 sliced of American cheese dried oregano dried basil paprika salt  pepper In a soup pot sautee beef, onion, peppers in some olive oil.   Toss garlic in and stir for a minute until fragrant. Add tomato sauce and canned diced tomato. Add seasonings Add 2 cups broth Bring to a boil Add rice or noodles cooked according to the package. Not a pretty bowl of soup

This is cheddar broccoli soup that I added ground beef and potatoes.  It was filling, but it turned out very brown!  If you need a fast soup I start with Campbells broccoli cheddar soup as a base.  First sautee some broccoli, carrot, and onion in oil.  Then add the condensed soup.  Use chicken broth next and you have a broccoli cheese soup base.  This time I browned some ground beef and threw in some already cooked potatoes.  You could also add pasta or pierogi.  Just start with some cheese soup and broth and go from there.  

Tortellini and meatball soup

  I bought packages of dried tortellini on sale and needed something to use them in.  I also buy packages of Costco meatballs and freeze them.  I got a jar of pasta sauce out, watered it down, added some seasonings like salt, pepper, Italian, then got it boiling.  I added the tortellini and some frozen peas and boiled the pasta until it was soft.  I baked my meatballs in the oven and then added them to the soup.  This is one of those soups that tasted better the second day.  

Goulash or American Chop Suey

This is one of those recipes to use up some pantry items!  Plenty of people will argue it's not real goulash and it's not supposed to be.  Some people call this American chop suey too.  Either way it's a hearty good meal during winter. Ingredients: 1 lb ground beef or ground turkey 1 small onion, diced 2 cloves of garlic, diced Half box of Macaroni noodles 14 ounce canned corn 14 ounce canned green beans 8 ounce canned tomato sauce 14 ounce diced tomatoes 1 cup chicken or beef broth 2 bay leaves 1 teaspoon salt and pepper 2 teaspoons paprika 1 teaspoon Italian seasoning Directions: Heat oil in a large soup pot.  Add the onion and meat, cook through.  Add the garlic and stir until fragrant.  Add all seasonings.  Stir in the diced tomatoes, tomato sauce, and broth.  Bring to a boil.  Add in canned vegetables.   Reduce heat and add noodles until cooked through.  Follow the minutes on the packaging.  Ready to eat!   ...

Lasagna Soup

  Ingredients: Italian sausage, casings removed 1/2 onion, diced 2 cloves garlic, minced 4 tablespoons fresh chopped parsley 3 cups chicken broth 2 1/2 cups water 2-3 dried bay leaves 2 cups marinara sauce (I used our regular jarred spaghetti sauce) black pepper broken lasagna noodles (break them into small pieces or they just don't stay on the spoon) Toppings: shredded mozzarella cheese 1/2 cup ricotta cheese grated parmesan cheese fresh chopped parsley fresh basil chiffonade Mix the ricotta cheese with some fresh parsley and grated parmesan.  The mozzarella and basil will be individual toppings.   Directions: Heat oil in a large soup pot.  Add the sausage until browned breaking it up with your spoon. Add chopped onion and cook about 3 minutes.  Add garlic and stir until fragrant.   Add broth, water, parsley, pasta sauce, bay leaves, black pepper, and bring to a boil. Hungarian Mushroom Soup

  Ingredients: 2 cups diced onion (about 1.5 small onions) 1 package sliced mushrooms 4 tablespoons butter 2 cups chicken broth 1 cup milk 1 tablespoon Hungarian sweet paprika 1 tablespoon soy sauce 2 tablespoons corn starch 1/2 cup sour cream Lemon juice Salt Pepper Cayenne pepper In a large pot melt butter. Add onions until softened. Add mushrooms and cook about 5 minutes. Stir in the chicken broth and soy sauce. Cover and simmer 15 minutes. In a small bowl whisk together 2 tablespoons cornstarch and 1 cup milk. Add milk mixture to soup, cover and simmer another 10 minutes. Stir in lemon juice, salt, pepper, cayenne. Serve with some crusty bread

Chicken taco soup

  I made my taco soup recipe with roasted chicken instead of ground beef this time.  It was a bit more like a chicken tortilla soup.  I squeezed lime and topped with sour cream and cilantro.  

Cabbage Soup

  It is a rainy Sunday so I made a big pot of soup.  No one came over for any though :(  Today I had mine over rice even though usually I just serve some bread on the side.   Cabbage Soup 1 roll of hot sausage 4 carrots, diced few celery stalks, diced 1 small onion, diced 1 green pepper, diced several cloves of garlic, minced 4 cups chicken broth 1 small cabbage 1 can diced tomatoes with chili a few spoonfuls of salsa salt, pepper, Italian seasoning In a large pot, brown the sausage, use a slotted spoon to remove and set to the side. In the same pot with the bit of sausage grease, add some oil and the carrots, onion, celery, green pepper.  Stir until softened.  Add seasonings and garlic.  Stir for about 30 seconds.  Next add the chicken broth and tomatoes and bring to a boil.  Stir in the cabbage.  Simmer on low for about an hour.  Serve!  Serve with a nice crusty bread with butter or I poured my soup over rice today....

Taco Soup

This recipe was incredibly easy and I'm sure my boyfriend could make it for me sometime! Taco soup served over cilantro lime rice with a side of beef and cheese taquitos.  I felt like the taquitos weren't necessary and I can skip next time. Taco Soup: 1 pounds ground beef, browned and fat drained 1 can corn, drained 1 can pinto beans, drained 1 can stewed tomatoes 1 can diced green chilis 1 can diced tomatoes with green chilis 1 can chili beans 1 packet taco seasoning 1 packet ranch seasoning 1 1/2 cups water ( used some leftover beef broth and then filled the rest with water) Plus additional toppings! Bring soup to a boil and heat at least 15-20 minutes. Serve over rice.  I prefer cilantro lime rice.  I added extra lime juice. Toppings we used were shredded cheddar, sour cream, lime juice, and hot sauce.

When the weather gets cold this soup always makes an appearance.    Recipe previously blogged.

Chili

It is officially fall.  We had a tropical cyclone dump rain on us all weekend long so I made chili. Ingredients: 1.5 pounds ground beef, browned with salt and pepper 3 cans kidney beans 3 cans tomato sauce 1 green bell pepper, diced 1 sweet onion, diced 1 jalapeno, diced 1 packet of McCormick chili season Brown the ground beef with a little salt and pepper.  Throw everything in a crockpot on low for about 4 hours. Top however you like it.  I prefer sour cream, cheddar cheese, and tortilla chips in mine.  Boyfriend likes cornbread over tortilla chips with his chili.  

College Ramen

I added, slaw mix, sausage, sprouts, and green onion to a packaged ramen soup.  

Potato Soup

Ingredients: 3-4 Carrots in a small dice 3 stalks celery in a small dice half a large onion diced 1 large garlic clove, minced several red potatoes in a small dice about 4 pieces of honey baked ham diced Bit of flour 1 cube of chicken boullion 2 cups warm water salt and pepper dashes of hot sauce milk 8 ounces velveeta cheese product Melt a stick of butter in a soup pan. Sautee the carrot, celery, onion until soft.  Salt and pepper the veggies.  Add garlic and stir.  Add potatoes and ham.  Add in flour and stir in until it's cooked off and not raw.  Next pour in 2 cups warm water and add the boullion cube.  Let boil and thicken.  Boil until potatoes are fork tender.  I ended up adding milk in a little at a time to keep the potatoes covered in liquid as they cooked.  When potatoes were tender I added in the velveeta and stirred until combined.  Add a few dashes of hot sauce and serve.
