Mango Grove

 Mango Grove weekend lunch buffet has returned!  12-3pm.  We went this Saturday and it was fantastic

Chocolate Chip Oatmeal Cookies

Betty Crocker's Recipe Ingredients 1 1/2 cups packed brown sugar 1 cup butter, softened 1 teaspoon vanilla 1 egg 2 cups quick-cooking oats 1 1/2 cups Gold Medal™ all-purpose or unbleached flour 1 teaspoon baking soda 1/4 teaspoon salt 1 cup semisweet chocolate chips (6 oz) 1 cup chopped nuts, if desired **I snuck in about 1/2 teaspoon cinnamon too Steps 1 Heat oven to 350°F. In large bowl, stir brown sugar and butter until blended. Stir in vanilla and egg until light and fluffy. Stir in oats, flour, baking soda and salt; stir in chocolate chips and nuts. 2 Onto ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart. 3 Bake 10 to 12 minutes or until golden brown. Cool slightly; remove from cookie sheet to wire rack.  

Beach Food

Mule in a mini bucket Puff pasty apple danish Puff Pastry Danish Recipe Prepare the filling. Beat the cream cheese and sugar in a medium bowl until smooth. Beat in the egg yolk, lemon juice and vanilla until combined. Set aside. You will have a bit of filling left over, you can decide what to do with it or only make 2/3 of a batch if math is your thing. Preheat the oven to 400 F. Line 2 baking sheets with parchment paper. Roll each puff pastry sheet into a 12 x 12 inch square. Cut each into 9 pieces. Prick with a fork several times in the center. Beat the egg white and water together and brush onto each puff pastry square. Place a scant tablespoon of cream cheese filling onto each square and then a teaspoon of your choice of jam, jelly or chocolate chips. Bake at 400 F for 15-18 minutes or until puffy and lightly browned. Cool on wire racks. Make the glaze by beating the powdered sugar with enough milk until smooth. Drizzle on cooled Danishes. Best served the same day. Or store tightly

Smoky Paprika Pork Chop

  This was such a good dinner!  The sauce had water, paprika, garlic, green onion whites, and finished with a little butter.  

Whole Foods sells the biggest, thickest pre-made burgers!

The brioche bun could hardly contain this giant burger. These were so thick!!!! Buns were brushed with butter and chopped garlic then toasted.  A bit of caramelized onion shown too I steam my cheese onto my burgers.  Toss a bit of water in the pan, add cheese, top with a lid.   They cheese will envelope the burger in melty goo.    

Party Pasta Salad

 I intended on buying pasta salad for a family reunion pool party.  I wasn't impressed with the store options and ended up making my own.  This is rotini pasta, cherry tomatoes cut in half, baby mozz balls cut in half, red onion, green pepper, cucumber, and Good Seasons Italian dressing.  

Hot Dogs, How do you like them?

  Kraut and mustard.  I use my air fryer to cook my hot dogs.

Taco Truck Visit

  I took an extra day off this past week so I had a 4 day holiday weekend.  I took advantage of my day off by going to the taco truck for lunch.  I haven't mentioned that I've been dieting since February's lent.  I ordered my usual 3 carnita gorditas.  Turns out I can no longer eat that many!  Boyfriend and I met up with my best friend at the food trucks in West Friendship.  Instead of ordering dinner I was still feeling full and ordered a big strawberry lemonade and some donut holes.  

Happy 4th of July

We went to a friend's bbq for 4th of July.  We had tons of chicken, steak, chorizo with corn, fajita veggies, potato, yucca, watermelon.  I had brought hot dogs and macaroni salad but we didn't need it.  I made it late in the week.  Nothing better than a hot dog with lots of mustard and some sauerkraut.    

Puff Pastry with ham, swiss, spinach and bechamel sauce

I made these 4 puffs for a beach house breakfast.  There was not a bite leftover.  Also, it was very easy to make one vegetarian by skipping the ham.  This is the most perfect brunch item!   INGREDIENTS LIST FOR THE HAM CHEESE & SPINACH PUFFS 2 sheets puff pastry 2 tablespoons butter 2 tablespoons all-purpose flour 1 cup warm milk 1 pinch of salt Freshly cracked  pepper , to taste Ground  nutmeg   1/2 lb cooked ham, diced 2 cups fresh spinach, rinsed and chopped 1 cup Swiss cheese, grated DIRECTIONS 1.  Cut the puff pastry sheets into 4 squares. Set aside in the refrigerator. Pre-heat your oven to 400°F. 2.  For the bechamel sauce: Melt butter over medium heat in a saucepan. Add flour and salt; cook, stirring frequently, until the mixture becomes pale golden with a slightly nutty aroma. 3.  Pour warm milk in 2 steps, stirring constantly with wooden spoon and whisk until smooth. Cook the mixture, stirring constantly along the bottom of the  saucepan , until boiling, about 7 minutes.
