Pound chicken flat, season both sides with salt and pepper.
Dunk chicken in each bowl and shake off excess.
Bowl 1 Mix flour, with salt, pepper, and any other seasonings.
Bowl 2 Beat an egg with a little water.
Bowl 3 Panko seasoned with salt, pepper.
The oil is ready when you drop a bit of panko in and it bubbles away
Fry chicken about 4 minutes. Our oil was too hot and they cooked in about 2 minutes!
Butter and toast buns.
Mix sriracha and mayo, add pickle and lettuce.
