In a heavy pot with lid add 2 tablespoons coconut oil plus 3 yellow corn kernels. On a medium high heat, wait until all three kernels have popped and remove them. Add 1/2 cup yellow corn kernels to pot and remove from heat. Shake kernels in pot until coated with oil. Return pot to heat with lid on and shake until kernels quit popping. Melt 2 tablespoons butter in microwave, pour over popcorn and add seasonings. I added old bay, garlic powder, and kosher salt. Sometimes I mix honey with my butter and add kosher salt for a sweet/salty combo like kettle corn.
