Homechef Fail

This was a HomeChef fail.  It was supposed to be chicken tacos, but the precooked chicken was so disgusting it made me gag and I threw it out.  It looked like canned chicken smooshed into a square.  No way I could eat that.   I ended up putting the diced hot pepper and fire roasted tomatoes in the provided pan and popped it in the air fryer for 10 minutes.  Then I stirred in a can of Bush's sidekick fiesta black beans and put it in the air fryer again.  I topped with cheese and let that melt a bit. I made the slaw with the chipotle ranch. I assembled my tacos with the bean mixture topped with the slaw.  

Baked Ziti with Chicken Meatballs

Ingredients: 1 box dry ziti noodles 2 jars pasta sauce Olive oil Bell Pepper, diced Onion, diced Garlic cloves, diced 2 bags of mozzarella cheese 1 bag of shredded parmesan cheese Meatballs Directions: Boil a box of ziti in salted water, drain. In a sauce pan add olive oil, sautee diced onions and bell pepper until soft, then add minced garlic.  Stir until fragrant (after about 1-2 minutes).  Add in 2 jars of pasta sauce of your choice.  We like one that has mushrooms.   Bake meatballs in oven per package recommendations.   Cut into bite size pieces.  These ended up being cut in quarters. Mix the cooked pasta with the sauce and cut meatballs. Put a layer of the pasta in an oven safe skillet. Then add a layer of mozzarella cheese and shredded parmesan. Add a second layer of pasta and a final layer of cheeses. Bake in t425 degree oven for at least 30 minutes. Serve with garlic bread, salad, roasted veggies etc!  

Spinach Artichoke Chicken

  I decided to order some Home Chef again.  I have ordered pizza delivery too many times in the past month.   In a skillet, heat oil and add spinach, stir until wilted.  Take off heat and add drained and chopped artichoke hearts, a bit of cream cheese, mozzarella cheese, plus garlic salt and black pepper.   Recipe said to bake the chicken in the skillet, but the thicker parts were under cooked.   I would bake in the oven at 400 degrees for 22-26 minutes.

 There is a Korean fried chicken restaurant near my work!  This is off Bel Pre near the Aldi.  I get the soy garlic chicken.  It comes with 8 huge pieces and I always have leftovers.  

Texas Roadhouse

  We had Texas Roadhouse gift cards from Christmas and Texas Roadhouse has a fabulous happy hour!   Key Lime and strawberry margaritas.  yum yum

Amylu Italian Chicken Meatballs

Costco sells these Amylu Italian meatballs.  They rock and come in a two pack.  I keep them in the freezer.  Baked a few off to have with some red lentil pasta, spinach, and pasta sauce.
