Flatbread Pizzas

Chicken, bacon, ranch, avocado Greek tzatziki chicken, dill Chicken Bacon Ranch Flatbread Ingredients: for 2 naan pizzas! naan flatbread diced cooked chicken.  I did chicken tenders that I marinated in italian dressing and chimmichurri diced cooked bacon.  I did 4 strips ranch dressing diced green onion whites diced avocado fresh basil leaves shredded mozzarella cheese Preheat oven to 400 degrees Smear ranch dressing on naan flatbread Add mozz cheese, chicken, bacon, green onions. Greek on the Street

The Greek on the Street food truck came to my neighborhood!  I tried the Greek fries and the falafel pita.  I had some fries to share and some leftover! They were really good like beach fries.  There was so much feta on my pita I think it was a bit too salty for me.  I can't wait for the truck to come again!  Check out their menu on their website and see if you can catch the truck too!

Greek Chicken

Home Chef Greek Chicken Souvlaki with Lemon Potatoes .  I made some lemon potatoes and chicken souvlaki with pita bread and hummus on the side.  I had such a craving for Greek food that the boyfriend and I also got take out one night from Yia Yia in College Park.

Spanakopita Bars

We had a big Greek party a few weekends ago.  Here is how we pulled it off. I made pastitsio the morning of the party and didn't bake it until an hour before the party began. I made spanakopita bars also the morning of the party after I had put the pastitsio together and served the bars at room temperature. I made tzatziki sauce the night before because the flavors need time to blend. My husband made Greek meatballs the night before and they were kept warm in a crockpot during the party. He prepped a salad the night before, chopping everything he needed, and did not dress it until right before the guests arrived. He made rice when guests started arriving. We also had some cheeses, olives, dates, roasted red peppers, honey, olive oils and pita bread.  The party was potluck so our friends brought many other things to enjoy.  I was very impressed that one of our friends made gyro meat using this Alton Brown recipe ! Annual BBQ

The borrowed smoker in our backyard! Our neighbors were very curious when it arrived :) My husband smoked a beef brisket and racks of ribs in it. A borrowed canopy for covering the patio area. 7 Layer Greek Dip I pinned this dip on my pinterest. I made changes to the original recipe . My version's layers 1 Container of Plain Hummus 1 Small Container of Greek Yogurt Roasted Red Peppers from a jar – Diced Marinated Artichoke Hearts from a jar – Diced 1/4 Red Onion – Diced Crumbled Feta Cheese Handful of Pine Nuts Sprinkling of Oregano- dried Cucumber Slices and Pita Chips for dipping I layered everything in the order written above and used a square dish with sides for serving because the roasted red peppers were liquidy. Falafel and Tzatziki Sauce

I made falafel pitas with tzatziki sauce (using up some of my garden's cucumbers!) I used Anne Burrell's falafel recipe They tasted awesome and I've made them twice now for dinner. I used 1 can of chickpeas that I drained instead of soaking dry beans One thing to note, everyone in the comments said to NOT flour these patties until you are ready to pan fry them. I chilled my chickpea patties without flouring them. When I was ready to pan fry them they needed some reshaping and then we floured them. Ingredients for a falafel pita sandwich Pita with pockets cut in half Cooked falafel patties Lettuce Onions Tomatoes Tzatziki sauce I used Emeril's recipe for tzatziki sauce as a guide. Pastitsio

This recipe comes from Elly Says Opa! Pastitsio is a Greek version of lasagna and it is delicious. 1 lb. bucatini pasta (I used ziti) 1 egg, lightly beaten 2 Tbsp. butter, melted 1/4 cup grated myzithra cheese (I used a soft goat cheese) 1 batch Greek meatsauce (recipe follows) 1 batch bechamel sauce (recipe follows) 1/4 cup kefalotyri cheese (I used a hard goat cheese) Start by making the meatsauce. It needs to simmer for an hour Greek Meatsauce 1 Tbsp. olive oil 2 medium onions, diced 4 cloves garlic, minced 2 lbs. ground beef (I used 2 pounds ground lamb) 1 (6 oz.) can tomato paste 2 cups water 1 cinnamon stick 5 or 6 whole cloves (make sure you count how many you use so you can fish them out later) 1/4 cup fresh chopped parsley, or about 1.5T dried 2 bay leaves salt and pepper In a large heavy bottomed pan, heat your olive oil. Greek Pitas

I roasted a boneless leg of lamb weeks ago. Then I made some rice to go with it, bought some pitas (that didnt have a pocket) and my husband made tzatziki sauce. The lamb was fantastic. I highly recommend the Harris Teeter pre seasoned boneless leg of lamb. It was so good I couldn't stop cutting pieces off and just eating them. The rice was a Rice o Roni type packet. The odd pitas that I cut in half with a serrated knife.

Greek Chicken Wraps

I originally bought chicken to make chicken empanadas for Super Bowl. We had to cancel our party due to the snow. I also had bought cream cheese, tomato, cucumber and feta for a greek layered dip. Instead I put everything together for Greek chicken I started with the creamy chicken and artichokes recipe and tweaked it 1 lb chicken breasts Flour to coat the chicken 1/2 + Chicken broth 4 ounces cream cheese 1/2 cup White Wine Salt & Pepper to taste Minced garlic Juice from half a lemon Container of crumbled feta cheese Sour Cream White vinegar diced tomato diced cucumber Tortillas Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet.
