New job provides lunch

 I started a new job this week and one of the perks is free lunches.  I ordered a cobb salad yesterday and again today and probably will get another tomorrow :)   Lettuce, blue cheese, grilled chicken, avocado, grape tomatoes, bacon, cucumber, craisins, and the sliced egg.  I do not eat eggs or tomatoes, but it's a great salad.  

Cowboy Skillet Shepherd's Pie

This was from EveryPlate and it absolutely rocked.  We will be making it again.  The recipe suggested adding cheese to the potatoes if you had it and so we did! Pre heat the broiler, mine is high or low.  I used low Make mashed potatoes.  I make mine with milk, butter, sour cream, garlic powder, salt and pepper. Heat a skillet and some olive oil.  Make a large dice on a poblano pepper and add to skillet with some salt and pepper.  Heat til tender.  Add a diced white onion with some salt and pepper and heat til tender.  Add 2 minced garlic cloves and a diced jalapeno.  Cook until fragrant.  Add ground beef, southwest spice, salt and pepper.  Cook through. Add a tablespoon of flour and cook at least 1 minute. Add 1/2 cup water, stock concentrate, 1 tablespoon ketchup and simmer til thickened.  Add beef mixture to an oven safe dish.  We used a square glass baking dish. Top with mashed potatoes.  Add cheese if you like. Put under the boiler until cheese has melted. Enjoy!

Cajun 15 bean soup with Italian sausage

I use a store bought mix of cajun spicy 15 bean soup.   I added mild Italian sausage that I put in the air fryer and then cut into pieces.

Keto Coconut chicken tenders

 I think this was a Kardashian recipe .   1 pound organic boneless skinless chicken breast, cut into strips (I used chicken tenders) 1 egg  1/2 cup almond meal 1/4 cup unsweetened shredded coconut 1 teaspoon paprika 1/4 teaspoon cayenne pepper 1/2 teaspoon garlic powder 1/2 teaspoon sea salt 1/4 teaspoon black pepper 1. Preheat oven to 400°F. 2. Place almond meal, coconut, paprika, cayenne, garlic, sea salt and black pepper in a small bowl. Stir to combine. 3. Crack egg into another shallow bowl and whisk. 4. One by one, dredge each chicken tender in the egg bowl, wiping off any excess and then dip each into the almond meal mixture. Roll until each tender is covered completely. 5. Place the coated tenders on a baking pan lined with parchment paper or a wire rack that fits on a baking sheet. The wire rack will make for a crispier texture. 6. Bake for 20 minutes, flipping the tenders once at the 10-minute mark. 7. When done, the chicken tenders will be golden brown and completely cooked

Low carb tortilla

 We had taco night and I found a good low carb tortilla, I think it's 50 calories and 4 net carbs.  

Roasted Brussel Sprouts

  Lately I've been having a bag of brussel sprouts per week.  I trim and cut them in half, toss on olive oil, salt and pepper.  Toss in the oven at 400 degrees.  Check doneness with a fork at 10 minutes.  It really depends on how big they are.  They can take 20 minutes.  Sometimes I dip them in sauce, I like general tso.  

Rutabaga Hashbrowns

Run half an onion and a whole peeled rutabaga through a food processor.  Then cook in a hot skillet.  I topped mine with cheese and ketchup, but I eat them plain too.  I kept the uncooked mix in the fridge and made some as needed.

 Swiss mushroom burger with slaw and watermelon.  The sides were leftovers from a birthday party. I made the Neely's Sweet and Spicy Coleslaw recipe .

  I make my mashed sweet potatoes with butter, maple syrup, salt, pepper, and cinnamon.

Bunless swiss mushroom burgers

 

The 90 second microwave keto bread

  Melt 1 tablespoon butter in a microwave safe bowl Add 3 tablespoons almond flour, 1 egg, pinch salt, 1/2 teaspoon baking powder.   Combine all ingredients, then microwave for 90 seconds. Cut in half, and lightly toast in a buttered pan. After I toasted the bun, I added cooked bacon and a slice of provolone cheese and popped it in the air fryer to toast and melt my cheese. Overall I found it eggy tasting and I absolutely hate eggs in all forms.  

Ham and Cabbage Soup

  This is from a youtube video . In one large stockpot add the following: 2 tablespoons olive oil 1 cup diced white onion 1 cup diced green pepper 1 cup diced celery Saute until tender Add: 3-4 minced garlic cloves Stir until fragrant Pour in 4 cups of chicken broth Add 14 ounce can of diced tomatoes.  I have been using a can of Rotel tomatoes with green chilies and a little medium salsa.   1/2 head of cabbage, chopped Cover pot and reduce heat.  Cook until the cabbage is tender.   Add seasonings: salt, pepper, Italian seasoning, whatever you like.   This is where I add meat, I've used ham and I've used sausage. Cook for another 10 minutes.
