This was from EveryPlate and it absolutely rocked. We will be making it again. The recipe suggested adding cheese to the potatoes if you had it and so we did!
Pre heat the broiler, mine is high or low. I used low
Make mashed potatoes. I make mine with milk, butter, sour cream, garlic powder, salt and pepper.
Heat a skillet and some olive oil. Make a large dice on a poblano pepper and add to skillet with some salt and pepper. Heat til tender. Add a diced white onion with some salt and pepper and heat til tender.
Add 2 minced garlic cloves and a diced jalapeno. Cook until fragrant.
Add ground beef, southwest spice, salt and pepper. Cook through.
Add a tablespoon of flour and cook at least 1 minute.
Add 1/2 cup water, stock concentrate, 1 tablespoon ketchup and simmer til thickened.
Add beef mixture to an oven safe dish. We used a square glass baking dish.
Top with mashed potatoes. Add cheese if you like.
Put under the boiler until cheese has melted.
