What is in the fridge? Potatoes

 I had some leftover cooked potatoes from a pot roast.  I ended up making some homefries with cheese, jalapeno, and sour cream for breakfast.  Bring on the spicy!  

Fried Chicken Sandwiches at home

with Red Robin onion rings and homemade campfire sauce! Heat peanut oil in a large pot (I used my spaghetti noodle one). Pound chicken flat, season both sides with salt and pepper. Dunk chicken in each bowl and shake off excess.   Bowl 1 Mix flour, with salt, pepper, and any other seasonings. Bowl 2 Beat an egg with a little water. Bowl 3 Panko seasoned with salt, pepper. The oil is ready when you drop a bit of panko in and it bubbles away Fry chicken about 4 minutes.  Our oil was too hot and they cooked in about 2 minutes! Butter and toast buns.   Mix sriracha and mayo, add pickle and lettuce.

This mushroom pot pie was wonderful!  I did cook some little yukon golds and add them in.  Otherwise the recipe was not changed!

& Pizza

We tried &pizza for the first time today for lunch.  I got the dirty bird which is like a bbq chicken pizza with jalapenos and also had buffalo sauce and blue cheese.  SO GOOD! Boyfriend got the American Honey which has hot honey and arugula and pepperoni, and goat cheese. We both ended up drinking a hibiscus lemonade. We liked the dirty bird one the best, but it was a good pizza experience overall.  They are pretty big and easy to split.    

Brownie Oreo Lush Dessert

Bake brownies in a 9x13 pan using the 'cake like' instructions.  Cool for at least 1 hour. Blend 1 package softened cream cheese, 2 cups thawed Cool Whip, and 1 cup powdered sugar until smooth in a mixer with paddle attachment.  Top the brownies with Cool Whip mixture. Crush 20 Oreo cookies in a food processor.  Top the Cool Whip layer with about 16 cookies worth on crumbs, saving about 4 cookies worth for later.  Mix 2 packages instant chocolate pudding with 3 cups of milk in mixer with the whisk attachment.  Beat about 3 minutes until thick.  Top with remaining Cool Whip.  I wish I had a little more!  I recommend getting the larger than 8 ounce size. The final step is before eating, you add the reserved 4 crushed cookie crumbs.

Roast Beef Sub

In the crockpot I added 2 boxes of beef broth, one onion, carrots, red potatoes, french onion dip seasoning, and a chuck roast.  Cooked on high for about 5 hours. I ended up throwing it all in tupperware and got around to eating it a day later. To re-heat, I cut the beef into bite size pieces added it to a pot with some of the broth and heated it through. I buttered and toasted a hoagie roll in the air fryer. Then I added the hot beef and provolone cheese. Back into the air fryer just to melt the cheese. So messy and good!   The potatoes I ended up microwaving for 2 minutes in a glass container.  Then I added butter and sour cream and mashed with a hand masher.  They tasted fantastic!  

Potstickers with General Tso Sauce

 I frequently pan fry potstickers for dinner.  I buy the big chicken veggie bag from Costco!  If you are new to making pan fried potstickers here is how you do it. Heat oil in a nonstick pan. Add pot stickers until the bottoms start to brown.  They will not be cooked through at this point. Add about 1/8th cup of water to the pan and cover with a lid.  This steams the potstickers all the way through. Uncover and cook until all the moisture in the pan is gone. When the bottoms of the potstickers feel crisp they are done! 

French Crumb Apple Pie

We went honeycrisp picking and I made a pie with our apples.  It ended up being a bit too soupy :(  I was very bummed.  Last year it was the best pie I ever made.    

Big Mac fake out

  I have been watching "The Food That Made Us" and it gave me a Big Mac craving.  I ended up making a turkey burger with cheese, pickles, thousand island, and kraut because I had no lettuce :) toasted and buttered brioche bun.  It was fantastic!!!
