Italian Sausage Pasta Bake

Hot Italian sausage links, cut into bite sized pieces and sauteed Jarred roasted red peppers, draied Canned marinated artichokes, drained Ziti, boiled Favorite jarred pasta sauce Italian cheese blend, shredded Hot Italian sausage being cooked with some roasted red pepper Everything but the cheese stirred together and dumped into a glass baking dish, then topped with the cheese. Bake until bubbly and cheese is melted Serve with some garlic bread

Leftover PB Frosting?

So you know how last weekend I made brownies with PB frosting? I had leftover frosting. I just put it in tupperware and stuck it in the fridge. Anthony and I decided we should dip some graham crackers into it, but then we went a little further turning it more into a candy. Giada's Lemon Ricotta Cookies

I admit to buying ricotta for some fabulous Italian pasta meal and then never getting around to making it. So I had a 15 ounce container sitting in my fridge and I decided to buy two lemons to make these cookies. =) Giada from the Food Network's cookies I followed the recipe exactly until it came to the glaze. My glaze was very thick so I added a little lemon lime soda to thin it out. The cookies are very cake like and the glaze absolutely makes them awesome I did not use parchment paper, I just used my regular cookie sheet, no cooking spray or anything needed In order to not make a giant mess with the glaze I put wax paper on a jelly roll pan, then put my cooling rack on top of that. The glaze dripped down onto the wax paper and the mess was easy to clean up and toss in the trash

Oven "Fried" Chicken

Yogurt and breadcrumb coated chicken that is baked in the oven. I bought 5 chicken drumsticks on sale for $3 and I wanted something like fried chicken I used this recipe but changed the seasonings a little bit I used garlic salt, black pepper, onion powder, and cayenne. I wish I had tossed a little hot sauce into the yogurt too I will definitley be trying this again and playing around with the spices. I want some hotter chicken!

No Mayo Potato Salad

Peanut Butter Frosted Brownies

Last weekend I made a box mix of brownies that had chocolate chunks in it and I decided it needed some doctoring. I made a batch of peanut butter frosting to go on top of them and kept the brownies in the fridge. I used this frosting recipe and had leftover.

Fajita Night

I bought a flank steak at Whole Foods and I bought their Santa Fe marinade. I bought the largest green pepper I've ever seen and an onion Spanish rice in a bag Yuca chips Maggies Fire Pico Salsa from Whole Foods rocks my world Two cans of black beans Big burrito sized flour tortillas and we had a feast last night! My husband had invited someone to dinner so there aren't photos. I feel weird about taking food photos when "new" friends are over I just wanted to share my RAVE REVIEW of the salsa I bought at Whole Foods I also made this simple Rachael Ray black beans recipe Rachael Ray Black Beans Black Beans: * 1 tablespoon vegetable oil * minced garlic * diced jalapeno * half an onion, chopped * 2, 15 ounce cans of black beans, drained and rinsed * 1 teaspoon ground cumin * Salt and pepper Sautee the onion, garlic, and jalapeno in the oil Then add the black beans and seasonings Heat through and serve

Bridal Shower Food

A whole lot of salad going on :) and I didn't take pictures of potato salad and a greens salad with strawberries and sugared pecans. The floral centerpieces were done by Safeway

Baby Shower Cookies

One of my friends recently had a baby. Our parents have been friends for over 30 years and my mom offered to host the baby shower. I helped my mom by bringing fruit salad and decorated sugar cookies. The sugar cookies are totally copied from Katie at Good Things Catered and they took me three hours for about 30 cookies and they aren't as detailed as hers. Lasagna Roll Ups

I had only a few lasagna noodles and I had leftover grilled chicken so I decided to use this recipe's filling and make lasagna roll ups instead of a lasagna. Instead of mushrooms I used some frozen spinach which I thawed in the microwave and strained the water.
