Christmas Cookie Platter

I did the usual cookie platters for Christmas Eve dinner and Christmas day.  No new recipes.  Oreo truffles, Buckeyes, Snickerdoodles, frosted sugar cookies.    

Christmas 2023

Sugar Cookies, snickerdoodles, and gingerbread cupcakes with cream cheese frosting Soft Snickerdoodle Cookies makes about 24 cookies 1 cup butter, softened 1 1/2 cups sugar 2 large eggs 2 teaspoons vanilla 2 3/4 cups flour 2 teaspoons cream of tartar 1 teaspoon baking soda 1/4 teaspoon salt 1 tablespoon cinnamon (Set aside for rolling) 3 tablespoons sugar 3 teaspoons cinnamon  Preheat oven to 350 degrees Mix butter, 1 1/2 cups sugar, eggs, and vanilla thoroughly in a large bowl until creamy Combine flour, cream of tartar, baking soda, salt, and 1 tablespoon cinnamon in a separate bowl Blend dry mixture into the butter mixture.  Add a little bit at a time, blending between additions. Chill dough and an ungreased pan for 15 minutes in the fridge Scoop 1 inch balls and roll into balls with hands.  Roll in the cinnamon sugar mixture  Place on chilled ungreased cookie pan and bake 9-10 minutes.   Let cool a minute and remove from pan to a cooling rack. ...

Sugar Cookies with Royal Icing

  I use Betty Crocker's Sugar cookie mix. Always chill your dough or cookies will spread! To make royal icing I use Wiltons meringue powder.   You need the meringue powder, water, and powdered sugar.  At least 1 pound of powdered sugar. Outline cookies first. Then fill with icing. I like to use gel food coloring to color my icing. Use sprinkles right away because icing does harden.

Snickerdoodles

  Ingredients: 1 sticks of soften butter 2 eggs 2 teaspoons vanilla 2 3/4 cups flour 2 teaspoons cream of tartar 1 teaspoon baking soda 1/4 teaspoon salt a few dashes of cinnamon in the dry mixture For Rolling: 3 tablespoons sugar 3 teaspoons cinnamon Directions: Preheat oven to 350 degrees. In a stand mixer, cream the butter and sugar together.  Then gently mix in the eggs. In a separate bowl combine all the dry ingredients. With the mixer on low add dry mixture a little at a time until combined. Chill the dough and cookie sheets in the fridge. In a small bowl stir together the sugar and cinnamon for rolling. Make small balls of dough and roll in the cinnamon sugar. Bake cookies for 10-12 minutes, cool for 2 minutes, then transfer to cooling rack.

Vanilla pudding chocolate chip cookies

 I made this recipe to take to the beach.  It said it made soft cookies.  They were and there were so many chocolate chips I think I'd cut back the next time!  I don't know why the recipe link says whole wheat.  The ingredients used regular all purpose flour.

Peppermint Blossom Cookies

  Ingredients 1/2   cup   unsalted butter   room temperature 3/4   cup   sugar 1   egg 1/2   teaspoon   pure peppermint extract 1   tablespoon   whole milk 1 1/4   cups   + 2 tablespoons all-purpose flour 1/8   teaspoon   salt 1/4   teaspoon   baking powder 1 10-   ounce   bag Hershey's peppermint kisses green and red colored sugars red   green and white nonpareils Instructions Unwrap 36 of the peppermint kisses, place into a bowl and put into the freezer. This will help them hold their shape better when placed onto the warm cookie. Preheat the oven to 350 degrees F. and prepare a baking sheet by lining it with parchment. Cream the butter and sugar together until light, about 3 minutes in the bowl of an electric mixer. Mix in the egg, peppermint and milk. Decorated Sugar Cookies

Preparing for the first holiday party at my house!  I started with decorating sugar cookies because they are the most time consuming.  I used a pouch of Betty Crocker Sugar Cookie Mix and followed the directions to make easy cookie cut outs. Easy Sugar Cookie Cut Outs Ingredients 1  pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix 3  tablespoons all-purpose flour 1/2  cup butter, melted 1  egg Directions 1 Heat oven to 375°F. In medium bowl, stir cookie mix, flour, melted butter and egg until soft dough forms. 2 On floured surface, roll dough to about 1/4-inch thickness. Cut with about 2 1/2- to 3-inch cookie cutters. On ungreased cookie sheets, place cutouts 1 inch apart.  I use a silpat. 3 Bake 6 to 9 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets. Chocolate Chip Oatmeal Cookies

Betty Crocker's Recipe Ingredients 1 1/2 cups packed brown sugar 1 cup butter, softened 1 teaspoon vanilla 1 egg 2 cups quick-cooking oats 1 1/2 cups Gold Medal™ all-purpose or unbleached flour 1 teaspoon baking soda 1/4 teaspoon salt 1 cup semisweet chocolate chips (6 oz) 1 cup chopped nuts, if desired **I snuck in about 1/2 teaspoon cinnamon too Steps 1 Heat oven to 350°F. In large bowl, stir brown sugar and butter until blended. Stir in vanilla and egg until light and fluffy. Stir in oats, flour, baking soda and salt; stir in chocolate chips and nuts. 2 Onto ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart. 3 Bake 10 to 12 minutes or until golden brown. Cool slightly; remove from cookie sheet to wire rack.  

Christmas Baking

  Oreo Truffles Crush 1 package of oreo cookies in the food processor.  Then add 1 package of softened cream cheese and blend until the mixture looks like mud.  Scoop 1 tablespoon of oreo mixture onto wax paper and pop in the freezer.  Roll into balls when they are frozen.  Freeze 10 minutes at least.  I froze mine over night.  Dip in melting chocolate.  I used Ghirardelli dark chocolate melting wafers, which I melted over a double boiler.  I used a toothpick to dip each ball into the chocolate.  While the chocolate is still wet I put on holiday sprinkles.  I then froze everything again for the chocolate to set.  I am keeping my truffles in a foil lined holiday tin in the fridge.   Peppermint Blossoms Makes about 36 cookies 1/2   cup   unsalted butter   room temperature 3/4   cup   sugar 1   egg 1/2   teaspoon   pure peppermint extract 1   tablespoon   whole milk 1 1/4...

When I found out about my furlough I felt sad and had to bake some chocolate chip cookies.  Nestle Tollhouse recipe.

Christmas Cookies in Spring?

Hallmark Channel decided to play some of their top Christmas movies during the quarantine.  I couldn't watch all the holiday baking without some decorated cookies of my own.  I popped open the freezer and dug out a few snowflake sugar cookies to decorate.  I use Martha Stewart's sugar cookie recipe.
