Sheet Pan Chicken fajitas

 Ingredients: 1 package of chicken tenders cut into smaller strips and halved Green and red pepper, thinly sliced Onion, thinly sliced Mushrooms, sliced Fajita or taco seasoning Vegetable Oil Tortillas Toppings:  cilantro lime sour cream salsa cheese guacamole Place chicken and veggies on a sheet pan.  Coat with oil and seasonings.  Bake in a 400 degree oven for 35 minutes.  Flip everything halfway through cooking time.  Serve on tortillas with toppings of your choosing.  We usually make cilantro lime rice on the side.

Taco Mac

I made a huge batch of taco mac and got to eat leftovers for days.  This is the taco mac recipe from 2022!  I loved this recipe so much I made it too often and haven't made it in a long time.  

Pineapple Pork Tacos

  This is my new favorite Hello Fresh meal. They had a ton of flavor and even included cilantro which I'm always suggesting they include!  

Pork fajita bowls

  This was also Hello Fresh, but had a lot more ingredients.  We bought the guacamole side again.  Tons of flavor.  I didn't add a bunch of additional ingredients either, just an extra lime so we had more wedges to squeeze.  I actually prepped everything ahead of time so when it came to dinner I only had to cook the peppers and onions, pork, and boil the rice.

Breakfast Burrito

Ingredients: Southern style hashbrown potatoes, the frozen kind with onions and peppers Tortillas, heated so they are pliable Canned black beans, drained and rinsed Shredded cheese, usually some cheddar  1 lb ground breakfast sausage, browned Spices like salt, pepper, garlic powder, onion powder, paprika, cayenne if you like heat *I dont eat eggs, but my boyfriend has added scrambled eggs to his I make the filling, top with cheese, and roll each burrito. To freeze I wrap a paper towel around the burrito and then wrap in saran wrap. To cook in the morning you just need to microwave  the burrito in the paper towel a few minutes!  Less than 3 will do

Hello Fresh Pork taquitos

 This meal is so so so good!  I added some microwave Uncle Ben's Spanish rice and some microwave text mex pinto beans.  We had enough filling to make a 7th taquito so I grabbed a tortilla form the fridge to make an extra.

Chicken Fajita

  I had to make my own fajita seasoning so here it is!  I happened to have all the ingredients and these tasted awesome.  I did buy a sliced onion/pepper box form the grocery store to help make this quick. 1 tablespoon cornstarch 2 teaspoons chili powder 1 teaspoon salt 1 teaspoon paprika 1 teaspoon white sugar 1/2 teaspoon onion powder 1/2 teaspoon garlic powder 1/2 teaspoon ground cumin

Cheese Enchiladas

I was feeling cheese enchiladas that I topped with a can of beef chili.  I made homemade enchilada sauce. Ingredients 10 small flour tortillas 3 bricks of cheese shredded with the food processor.  I recommend cheddar, colby jack, and pepper jack 2 16 ounce cans fire roasted diced tomatoes 2 4 ounce cans diced green chili 1 15 ounce can tomato sauce 1 onion, diced 1 clove garlic, minced 1/2 tsp salt 1 tsp cumin 1/2 tsp oregano 1/2 tsp basil 1/2 tsp cilantro 8 ounce sour cream Make the enchilada sauce first! Sautee onion and garlic in a large pot.  In a blender puree the diced tomatoes.  Add the pureed tomatoes, tomato sauce, chilis, seasonings to the pot with the onion and garlic.  Bring to a boil, simmer for an hour. Ladle a layer of sauce in the bottom of your casserole dish. Add shredded cheese to tortilla, roll, place seem side down in the sauce. Ladle a layer of sauce over the top of the enchiladas. Chicken fajitas

I made some chicken fajitas on my cast iron grill.  The leftovers become a quesadilla.  I need to make chicken more often and I need to use my grill pan more often!    

Pineapple Margarita and Mexican corn

Margarita Ingredients: 1 cup Ice 1/2 cup Frozen pineapple 4 ounces Pineapple juice 1/4 cup Orange juice 2 tablespoons Lime juice 1/2 cup Tequila 2 tablespoons Honey Tajin for the rim We thought it needed more pineapple flavor and are going to try again with more pineapple and more pineapple juice.  Also I'd rather use triple sec than orange juice. Corn Ingredients: Corn on the cob, boiled about 5 minutes Mayo Garlic powder Lime juice Tajin Cilantro Cojita cheese Mix the mayo with some garlic powder and lime juice and brush onto corn. Add cojita cheese to a plate and roll the corn in it. Sprinkle lime juice over the corn. Press cilantro into the corn.  I couldn't get it to really stick without pressing. Sprinkle as much Tajin as you want.    

Mexican Meatloaf

Ingredients for the loaves: 1 lb ground beef 1 -2 slices of bread (original recipe suggested crush tortilla chips) I used low carb bread Can black beans.  Eyeball the amount you want.  A whole can is not needed  Can corn.  Eyeball the amount, whole can is not needed.   1 -2 eggs salsa 1 packet taco seasoning dash of milk.  I used almond milk  Shredded cheddar cheese Topping:  red enchilada sauce and more cheddar cheese Serving Suggestions:  sour cream, salsa, guacamole, avocado slices In a bowl place the bread and soak it in milk.  Then add the rest of the ingredients and mix using your hands.  I make mini loaves and this made about 5.  A few fell apart so I think I needed more egg and more bread to bind it together.  The addition of the corn and black bean made it hard for them to stay together I think.  Put the mini loaves on a sprayed sheet fan.  Top with red enchilada sauce.  When the loaves are don...

Taco Soup

This recipe was incredibly easy and I'm sure my boyfriend could make it for me sometime! Taco soup served over cilantro lime rice with a side of beef and cheese taquitos.  I felt like the taquitos weren't necessary and I can skip next time. Taco Soup: 1 pounds ground beef, browned and fat drained 1 can corn, drained 1 can pinto beans, drained 1 can stewed tomatoes 1 can diced green chilis 1 can diced tomatoes with green chilis 1 can chili beans 1 packet taco seasoning 1 packet ranch seasoning 1 1/2 cups water ( used some leftover beef broth and then filled the rest with water) Plus additional toppings! Bring soup to a boil and heat at least 15-20 minutes. Serve over rice.  I prefer cilantro lime rice.  I added extra lime juice. Toppings we used were shredded cheddar, sour cream, lime juice, and hot sauce.

I ordered two barria gorditas, boyfriend got a burrito, and we both got the pineapple/raspberry soft serve margaritas!  Yum, but very much like dessert.  It took the whole meal to finish them.  

Chimichurri steak and black bean soup

  Steaks were marinated in chimichurri sauce, and some was saved for topping after cooking. Sauce: Cilantro, parsley, olive oil, red pepper flakes, garlic, dash of red wine vinegar, squeeze of lime juice, salt and pepper.  Blend all in a blender. Birthday Fiesta!

It was that time of year.  The celebration of my birth!  I made my chicken burritos and homemade enchilada sauce.   I also made guacamole, but it didn't photograph well because it was made in a green bowl. I prepped all of the burritos a day ahead.  It took about 3 hours.  You aren't a slave to the kitchen for the 3 hours.  You can start things and walk away, like baking the chicken and simmering the enchilada sauce. I baked 3 chicken breasts in the oven that I simply coated in olive oil, salt, and pepper.  The chicken took about 40 minutes.  Internal temp must be 165. I made a package of Spanish rice on the stove. I diced my onions and opened cans. Shredded all my cheeses (half for filling and half for topping) The sauce gets simmered on the stove for an hour. Leftover pulled pork Mexican bowl

 What to do when pulled pork bbq sandwiches get old?  Make a Mexican pulled pork bowl instead! Rice, pulled pork that I reheated in taco seasoning with water on the stove (just follow the taco seasoning packet directions), corn, black beans, cheese, salsa and sour cream. 

Taco Mac

  Boiled pasta of your choice Ground beef, I used a sausage roll.  Browned 1 can black beans, drained 1 can diced tomatoes with green chili 1 package softened cream cheese 1 package of taco seasoning Onion, diced 1 can diced green chilis Shredded cheddar cheese Boil pasta and reserve 1 cup of the water Brown the ground beef with the diced onion, add taco seasoning and however much water the packet suggests to add. Add the cream cheese, stir to combine, add reserved pasta water as needed to thin the sauce. Stir in the beans, chilies, and diced tomatoes. You could throw in a can of drained canned corn if you have it. Top with cheddar cheese, sour cream.  Any toppings you like.  I add some hot sauce to mine.
