It was that time of year. The celebration of my birth! I made my chicken burritos and homemade enchilada sauce. I also made guacamole, but it didn't photograph well because it was made in a green bowl.
I prepped all of the burritos a day ahead. It took about 3 hours. You aren't a slave to the kitchen for the 3 hours. You can start things and walk away, like baking the chicken and simmering the enchilada sauce.
I baked 3 chicken breasts in the oven that I simply coated in olive oil, salt, and pepper. The chicken took about 40 minutes. Internal temp must be 165.
I made a package of Spanish rice on the stove.
I diced my onions and opened cans.
Shredded all my cheeses (half for filling and half for topping)
The sauce gets simmered on the stove for an hour.
Then I put together my filling and wrapped all my burritos. I got about 10 this time because the tortillas were huge! I think they said gordita size. I put two burritos with sauce and cheese in a small glass dish to be baked for just boyfriend and I. The rest went into one of those disposable pans. Easy cleanup later.
The burritos went into the fridge until party time. The only thing that needed to be made when guests arrived was the guacamole.
