While prepping everything for the burger, crack the oven up to 425 and throw in some potato wedges that have been coated with olive oil, salt, and pepper.
Butter and toast the buns. They usually send a really nice soft brioche type bun.
Heat a skillet with olive oil and add corn. Heat for a few minutes then remove from stove.
To the ground beef add some chili powder, salt, pepper and form patties. Cook evenly in a skillet.
Dipping sauce for the fries was enchilada sauce mixed with mayo.
Add some enchilada sauce to the corn after cooking.
Time to stack a burger!
Bottom bun, hamburger patty, guacamole (they sent premade but it lacked flavor and needed lime badly), corn, cotija cheese, fresh chopped cilantro, top bun.
