The brussels were halved, coated in olive oil, salt, pepper and baked in 400 degree oven for about 30 minutes. After 10 minutes on their own I added the chicken.
I coated the chicken in olive oil, salt, pepper, and cooked for a few minutes on each side on the stove top.
Added the chicken to the brussels for 10 minutes. Then topped the chicken with goat cheese and cranberry, popped back in the oven for another 10 minutes.
My brussels were great. The chicken was ok. Dinner was made and that was all that mattered!
