College Ramen

I added, slaw mix, sausage, sprouts, and green onion to a packaged ramen soup.

Chicken saltimbocca

Chicken with fresh sage and wrapped in proscuitto.  Then dredged in a little flour.  Cooked in a little olive oil.  Remove chicken and to the same pan add white wine, and butter.  I juiced a little lemon juice for the finishing touch.

Cook on low for about 8 hours.  If your pork butt has a bone it should pull right out. Use one of those large metal disposable pans to pull the bits of pork out to shred. Keep about a cup or two of the crockpot liquid. Discard the rest of the liquid. Add the pork back into the crockpot, add some of the liquid back and add your bbq sauce.  Heat through and serve.

I love that Hello Fresh has included ramen soup.  I make it all the time now! This was ground turkey and mushroom.

Jamaican pork patties

This was a new recipe for me.  Pork patties with a tomato pan sauce and roasted veggies.   The patties were pork, onion, salt, pepper, Tunisian spice blend.  You make 6 meatballs and then flattened them out for patties.   After cooking the patties in a skillet with olive oil, remove them but do not clean out the skillet. Add diced tomato with more Tunisian spice.   In a separate bowl add flour and stock make a slurry.  Add to the tomato, stir until thickened.  Add a little butter at the end.  Pour sauce over patties.  

Chicken Curry

This recipe was on the difficult side and took a long time to make.  It was very tasty in the end. The curry sauce and chicken: Cut chicken into bite sized pieces.  Marinate the chicken in sour cream, with sugar and salt. In a large pot add olive oil.  Then add garlic, onion garam masala, turmeric, salt and pepper.  Stir until fragrant and then add in tomato paste, and 1/2 cup of water.  Bring to boil and then turn the heat down.  Simmer about 10 minutes.  Next add the chicken into the curry sauce and cook through, about 5-7 minutes.   The veggies: Small dice on the potatoes, carrots, and onion.  Put in a microwave safe bowl and cover with cling wrap.  Microwave about 6 minutes.  Salt the veggies. The veggies are finished off in a skillet with olive oil.  Add a little mustard and turmeric and let them get crusty. Squeeze lemon juice over them when finished.   The rice:  This was just rice boiled in water with turmeric added.  

Onion Smothered Meatloaf

This is a Hello Fresh box.  I always order it when it's available.  This is one of the best meatloaf recipes! Meatloaf:  ground beef, panko, garlic powder, salt, pepper.  Form two loaves on a foil lined sheet pan.  Baked at 425 for 22-25 minutes. Mashed Potatoes:  boil red skin potatoes, throw in a mixer with butter, sour cream, milk, garlic powder, salt, pepper. Veggies:  Carrots and zucchini roasted next to the meatloaf with just olive oil, salt, and pepper.  Add sumac after cooking if you have it.   Creamy caramelized onions: Brown in a saucepan in some olive oil, add some cream cheese, stock, water, and sugar and cook until thickened.  Pour over those beautiful meatloaves.
