This was a new recipe for me. Pork patties with a tomato pan sauce and roasted veggies.
The patties were pork, onion, salt, pepper, Tunisian spice blend. You make 6 meatballs and then flattened them out for patties.
After cooking the patties in a skillet with olive oil, remove them but do not clean out the skillet.
Add diced tomato with more Tunisian spice.
In a separate bowl add flour and stock make a slurry. Add to the tomato, stir until thickened. Add a little butter at the end. Pour sauce over patties.
