Quick and Dirty Pot Pie

Ingredients: 2 cans cream of potato soup 1 package of frozen veggies Handful or two of frozen hashbrowns Shredded rotisserie chicken Salt, pepper, garlic powder Store bought pie crust Heat the soup in a large saucepan, add frozen veggies, heat until they are less frozen, add in the chicken, season well, put everything in a greased casserole dish, bake at 350 for 25-30 minutes.  

Red curry lentils

  This made sooooo much food.  I ended up sharing with one of my best friends.  I think it needs a little more seasoning overall.  Here is the recipe INGREDIENTS 1   yellow onion   2   cloves   garlic   2   cups  lentils 1   sweet potato (about 3/4 lb.)   2   carrots   3   Tbsp   curry powder (hot or mild)   1/4   tsp   ground cloves (optional)   1   15oz. can   petite diced tomatoes   1   15oz. can tomato sauce 3   cups   vegetable broth*   1   14oz. can   coconut milk (full fat)   INSTRUCTIONS Dice the onion and mince the garlic. Peel the sweet potato and carrots. Dice the sweet potato (1/4-1/2 inch cubes) and slice the carrots. Add the onion, garlic, sweet potato, carrots, lentils, curry powder, cloves, diced tomatoes, tomato sauce, and vegetable broth to the slow cooker. Stir to combine. Place the lid on the slow cooker and cook on high for 4 hours or low for 7-8 hours. Once cooked, the lentils should be tender and most of the liquid should be absorbed. Stir the can of coconut milk

Wilde Lake Bagel Bin

I am upset with Bagel Bin right now.  I'm sure I will return, but they sold me my favorite sandwich knowing they had no avocado.  It wasn't as good and satisfying as it usually is, and it's expensive without even having the avocado.  I feel like it needed to be discounted.  

Costco Ravioli Lasagna

 This is one of our favorite meals to purchase from Costco.  It is in the fresh food section, not frozen!

BBQ, cheddar, bacon meatloaf with roasted green beans, mashed potatoes, and corn

  Ground beef, cooked bacon pieces, shredded cheddar, 1 minced shallot, 1 tablespoon water, panko, garlic powder, salt, pepper and topped with bbq sauce!  Form into two loaves.  Heat oven to 450, spray a little vegetable spray so the loaves don't stick, bake 15-20 minutes.

Pecan Crusted Chicken, Honey Mustard, Apple Salad

This is a HelloFresh recipe and it was awesome!  I did add a few extra things to my salad like goat cheese, cranberries, fried onions, and bacon!  YUM  

Pesto Veggie Pizza, Friday Night Out

There is a new restaurant open on Main Street Sykesville called 7556 owned by Keith.  It is next door to Dandelion bakery, which is owned by his daughter.  I went with my best friend to try it out last night.  I had a wonderful pinot grigio with the pesto and mushroom pizza.  I don't think I'm a fan of the gluten free crust, but the toppings were very good and I ate the whole thing 😋.  My friend ordered the meatloaf with mashed potatoes and asparagus and it was huge!  He had leftovers.  I'm glad mine wasn't as large because I got to try a dessert!  I had the chocolate cream pie which had a wonderful chocolate taste.  Made by the bakery next door of course.  

Spaghetti Night

Boyfriend made spaghetti on Wednesday.  It was very good minus the mushrooms.  They ended up with a strange texture, extra chewy.  I made need some advice on how to properly cook frozen mushrooms!

Taco Tuesday

 I had to have tacos on Tuesday this week.   Taco Meat: 1 pound of ground turkey Chopped onion 1 packet of taco seasoning.  Add water as directed on the package Tortillas of your choice.  We like flour Toppings: Salsa, medium sour cream shredded cheddar raw onion romaine lettuce Guacamole Guacamole: 2 avocados, mashed juice of 2 limes *Mine ended up having a lot of juice so 2 was a bit too much.  All depends on your limes! raw chopped onion cilantro, minced half a jalapeno, diced half of a roma tomato, diced salt

Unfried pork chop

I made my braised red cabbage in the crockpot again.  This time I started with double the liquid and seasonings for about 3/4 a red cabbage.  I was so tired I forgot to turn the crockpot on.  I ended up cooking it on high for about 3 hours and it worked just as well as cooking on low for 6-7 hours.   I also decided to try the breading method on some thin pork chops that I didn't flatten.  The chops were baked at 400 degrees in the oven until the internal temp was 145.  I love my digital thermometer.  It is one of the best cooking tools!  The chops cooked well, but the breading was not that fried crisp texture I was looking for. Throw the chops in the air fryer with a spray of avocado oil and I got my desired result!   Less oil and a crispy breaded pork chop.

Ham and Swiss Sliders on Hawaiian Rolls

 I bought a $40 ham on sale for $14 and pulled it apart.  Now I'm trying to use it as much as I can.  I've made soup and now these sliders.  These got a little overdone after 20 minutes of baking. Ingredients: 12 small Hawaiian rolls, split Slices of ham Sliced of swiss 3/4 cup melted butter 1 teaspoon Brown sugar 1 teaspoon Dijon mustard 1 teaspoon Worcestershire sauce Preheat over to 350 degrees.  Grease a 13 x 9 pan.  Place ham and swiss in Hawaiian rolls.  Combined melted butter, mustard, brown sugar, and Worcestershire sauce and brush over the tops of the rolls.  Bake about 15 minutes.  I baked mine for 20 and felt they were a little overdone.  They didn't taste burnt.  They tasted great.  

15 bean soup with ham and sausage

I buy Hurst 15 bean cajun soup mix.  I add sauteed carrots, onion, celery, garlic, ham and andouille sausage.  Simmer for 1.5 hours.  Stir in a can of diced tomatoes, undrained.  Simmer for another 30 minutes and serve.  I like the soup with biscuits or garlic toast.  

Chicken Burritos with Enchilada Sauce

This recipe makes about 19-20 burritos!  I rolled, sauced, and baked 10 of the burritos.  The rest of the sauce and burritos were wrapped separately and frozen for later.   Burrito Ingredients: 1 box of Spanish rice, cooked per box instructions 1 cup chopped onion 1 can 15.5 oz drained pinto beans 1- 8 oz cream cheese, softened 2- 8 oz blocks of shredded pepper jack cheese 1- 8 oz block of shredded colbey jack cheese 1/2 teaspoon salt 4 cups shredded chicken.  I used rotisserie chicken 20 burrito size flour tortillas, warmed in the microwave for ease of wrapping Burrito Directions: Stir all ingredients (saving 2 cups of cheese) together and fill each tortilla.  Place in a greased casserole dish.  Make enchilada sauce and pour over the burritos.  Add 2 cups of cheese to the top of the burritos.  Bake uncovered at 350 degrees for about 45 minutes.   Enchilada Sauce Ingredients: 1 chopped onion 1 clove garlic minced 2- 16 oz cans diced tomatoes, undrained.  I used fire roasted 1- 15 oz ca

Meatballs on zucchini noodles

Baked frozen meatballs per directions on the bag.  Sauteed onions, green pepper, and garlic then added them to triple mushroom pasta sauce with a little sugar and Italian seasonings.  Microwaved the zucchini noodles and added a little salt.  I find them seriously under seasoned on their own.
