Sausage sweet potato breakfast

I used this as a breakfast burrito filling.  It could go over rice for lunch or dinner too 1 package of jimmy dead sausage 1 cubed sweet potato 1 head of broccoli 1 can of rinsed black beans Roast the broccoli and cubed sweet potato in the oven with seasonings of your choice. Cook sausage on the stove and add all ingredients together and heat through. Wrap in a tortilla and eat with some hot sauce!

Breakfast Burrito

Ingredients: Southern style hashbrown potatoes, the frozen kind with onions and peppers Tortillas, heated so they are pliable Canned black beans, drained and rinsed Shredded cheese, usually some cheddar  1 lb ground breakfast sausage, browned Spices like salt, pepper, garlic powder, onion powder, paprika, cayenne if you like heat *I dont eat eggs, but my boyfriend has added scrambled eggs to his I make the filling, top with cheese, and roll each burrito. To freeze I wrap a paper towel around the burrito and then wrap in saran wrap. To cook in the morning you just need to microwave  the burrito in the paper towel a few minutes!  Less than 3 will do

Apple Pie Cinnamon Rolls

1 can apple pie filling 1 can of cinnamon rolls cut into 4ths Stir together and bake at 350 degrees for about 40 minutes.  Drizzle the frosting on after.  Couldn't be easier!

Hashbrowns

Boil red potatoes, then dice and fry with peppers and onions.  Top with old bay, paprika, salt, pepper, and cheese!

Hashbrowns made right

I am guilty of using frozen hashbrowns to make things faster for breakfast.  These are hashbrowns done the right way.  I boiled my potatoes, diced, then added some onions and peppers and spices.  I used some pepper, salt, paprika, and cayenne this time.  When you cook these in the skillet make a nice layer and let them sit.  If you stir them all around you wont get crispy bits.

Rutabaga Hashbrowns

Run half an onion and a whole peeled rutabaga through a food processor.  Then cook in a hot skillet.  I topped mine with cheese and ketchup, but I eat them plain too.  I kept the uncooked mix in the fridge and made some as needed.

What is in the fridge? Potatoes

I had some leftover cooked potatoes from a pot roast.  I ended up making some homefries with cheese, jalapeno, and sour cream for breakfast.  Bring on the spicy!

Beach Food

Mule in a mini bucket Puff pasty apple danish Puff Pastry Danish Recipe Prepare the filling. Beat the cream cheese and sugar in a medium bowl until smooth. Beat in the egg yolk, lemon juice and vanilla until combined. Set aside. You will have a bit of filling left over, you can decide what to do with it or only make 2/3 of a batch if math is your thing. Preheat the oven to 400 F. Line 2 baking sheets with parchment paper. Roll each puff pastry sheet into a 12 x 12 inch square. Cut each into 9 pieces. Prick with a fork several times in the center. Beat the egg white and water together and brush onto each puff pastry square. Place a scant tablespoon of cream cheese filling onto each square and then a teaspoon of your choice of jam, jelly or chocolate chips. Bake at 400 F for 15-18 minutes or until puffy and lightly browned. Cool on wire racks. Make the glaze by beating the powdered sugar with enough milk until smooth. Drizzle on cooled Danishes. Best served the same day. Or store tightly...

Puff Pastry with ham, swiss, spinach and bechamel sauce

I made these 4 puffs for a beach house breakfast.  There was not a bite leftover.  Also, it was very easy to make one vegetarian by skipping the ham.  This is the most perfect brunch item!   INGREDIENTS LIST FOR THE HAM CHEESE & SPINACH PUFFS 2 sheets puff pastry 2 tablespoons butter 2 tablespoons all-purpose flour 1 cup warm milk 1 pinch of salt Freshly cracked  pepper , to taste Ground  nutmeg   1/2 lb cooked ham, diced 2 cups fresh spinach, rinsed and chopped 1 cup Swiss cheese, grated DIRECTIONS 1.  Cut the puff pastry sheets into 4 squares. Set aside in the refrigerator. Pre-heat your oven to 400°F. 2.  For the bechamel sauce: Melt butter over medium heat in a saucepan. Add flour and salt; cook, stirring frequently, until the mixture becomes pale golden with a slightly nutty aroma. 3.  Pour warm milk in 2 steps, stirring constantly with wooden spoon and whisk until smooth. Cook the mixture, stirring constantly along th...

Smoothies

I have been counting calories for a while now.  Smoothies are one of my favorite breakfasts.  Tons of fruit servings!  Using frozen fruit means I don't have to use any ice. Ingredients: Frozen fruit blend.  I like this tropical one with mango, pineapple, strawberry 1 banana 1 cup plain lowfat yogurt Juice of 1 lemon Splash of milk honey chia seeds

Ham and Cheese Breakfast Croissants

I like to make these for the beach house!  Easy to pre assemble and glaze and bake when you need them. Ingredients:   Croissants, split Deli Ham, sliced Swiss Cheese, thin sliced 2 tablespoons Dijon Mustard 1 tablespoon Honey 1 tablespoon Brown Sugar Bake at 400 degrees until hot and melty.  Originally put them in at 350 for 10 minutes and they weren't hot enough.

Happy Valentines Day

I did the heart shaped cinnamon rolls with a can of cinnamon rolls that came with icing.  Then the boyfriend took me to Full on Crafts to get a le pilgrim sandwich!  It's a Thanksgiving sandwich with aioli, turkey, stuffing, mashed potatoes, cranberry sauce and a side of hot gravy to dunk it in.  It was filling!

Beach food!

Bahama Mama and Orange Dreamsicle Snowballs.  It was supposed to rain Saturday so we didn't go on the beach. Sunday was a visit to Old Berlin and Rayne's Reef Soda Fountain and Grill.  Extremely large rootbeer float. Take out from Denovo's in Ocean Pines.  I had linguine with meatballs and side salad.  It was enough food that it was Fri night dinner and Sat lunch. Two weeks ago I made a lot of food at the beach!  BBQ chicken, corn, potato salad, macaroni and cheese for dinner.  Sausage, cinnamon bun cake, and roasted potatoes for breakfast.   BJs on the water has a drink called Sailor's Delight.  It is the best!

Pancakes

Sometimes my home delivery boxes come with a product sample.  I got this little box of whole grain pancake mix.  They were actually the best pancakes I've made.  I'm not very good at making them.  Topped with hickory syrup of course :)
