More holiday food

After making stuffing balls I had a craving for more stuffing.  This time I just made the stuffing without eggs and didn't bake it.  Sliced ham, scalloped potatoes, and another round of sausage stuffing. For the ham I made a glaze.  Orange juice, sugar, honey, mustard, cinnamon on the stove top boiled down to a thicker consistency.  Poured over the ham.  Ham went into the oven for 15-20 minutes to warm up. Scalloped potatoes are my usual recipe.  You only need butter, onion, milk, flour, cheese, and thinly sliced potatoes.  I have seen people do the layers differently.  I do a layer of potato, then sauce, potato, sauce.  I personally like bread crumbs on top, but my boyfriend doesn't.  I put bread on only half.  We use a mandolin to get our potatoes thin.  If I use a knife they take forever to get soft.

The leftover ham from Christmas with steamed veggies and a little Asian sauce combo.

Ham and Swiss Sliders on Hawaiian Rolls

I bought a $40 ham on sale for $14 and pulled it apart.  Now I'm trying to use it as much as I can.  I've made soup and now these sliders.  These got a little overdone after 20 minutes of baking. Ingredients: 12 small Hawaiian rolls, split Slices of ham Sliced of swiss 3/4 cup melted butter 1 teaspoon Brown sugar 1 teaspoon Dijon mustard 1 teaspoon Worcestershire sauce Preheat over to 350 degrees.  Grease a 13 x 9 pan.  Place ham and swiss in Hawaiian rolls.  Combined melted butter, mustard, brown sugar, and Worcestershire sauce and brush over the tops of the rolls.  Bake about 15 minutes.  I baked mine for 20 and felt they were a little overdone.  They didn't taste burnt.  They tasted great.

Ham and Cheese Quiche

Ham and Cheese Quiche 1 frozen pie crust 1 egg 1/2 cup cream or milk salt herbs, I like to use rosemary (fresh or dried) but I cut some fresh chives for this one Diced ham Shredded cheese, Swiss goes well with ham In a bowl beat together the egg, cream or milk, and seasonings. Pour into the prepared pie crust. Evenly sprinkle ham onto the egg mixture. Top with a layer of shredded cheese. Bake in a 375 degree over for about 40 minutes. Check to see if the quiche is set in the middle. If it is still liquidy put back into the oven for another 10 minutes and check it again.

15 Bean Soup

This recipe was from Fix-It and Forget it Lightly We had a ton of leftover ham to use up so this is what I found looking for ham and soup recipes. This was a good recipe to split into individual tupperware containers and reheating for lunches. 1 lb dry 15 bean mixture We looked at the beans in the mixture and bought the cans. 2 quarts of water 2 cups of ham, chopped We used much more ham 1 cup onions, chopped 2 cups canned low sodium diced tomatoes We probably used flavored diced tomatoes, one with garlic. 1 teaspoon chili powder 2 tablspoons lemon juice 2 cloves garlic, chopped finely 1 teaspoon salt 1/2 teaspoon black pepper Hot Sauce We add hot sauce to most soups 1. Soak beans in water overnight and drain 2. Mix beans, add water, and ham in slow cooker 3. cover and cook on low 8-10 hours 4. add remaining ingredients 5. Cook on high another hour

Ham Cannelloni

Last but not least in todays updates, a recipe review. I actually cooked for my brothers family the day before Easter. I made Rachael Rays Ham Cannelloni dish from her website. I figured it had ham so it was Easter related : ) I wish I had doubled it because when you have 7 people eating it just didnt make enough, and I totally made more cannelloni than the recipe said it would make. I think I used about 10-12 egg roll wrappers, not the 8 the ingredients list suggested. It was very easy to make. I guess it gets pluses for that. After baking it seemed a bit greasy and its a big white mess. It made me feel so unhealthy! I think you could easily substitute some other things into the filling. I dont know if I'll ever make it again. Only if maybe my DH said he wanted it, but I doubt it! Here is the recipe link http://tinyurl.com/358q9c
