Spaghetti sauce when you don't want chili again

Home Chef had a wonderful sounding ground turkey chili skillet meal topped with biscuits.  By the time my order came I was not in the mood for more chili!  So I just made spaghetti sauce instead.  I still have the dry biscuit mix for another day.  

Baja Burgers

Home Chef Baja Burgers.  These originally were impossible burgers, but they let me sub in ground beef.  Then the box came without ground meat and they sent diced chicken.  That was not going to make a burger :(  I immediately notified Home Chef and they refunded the meal.  I thawed out some ground turkey and ended up making the burgers with that.  The burgers had roasted jalapeno and roasted tomatoes plus pepperjack cheese and guacamole.  I felt like they needed some kind of creamy element like a spicy mayo or maybe just a chipotle ranch dressing.  

Hatch Chile Gnocchi

This is a Home Chef recipe.  That was quick and easy to make.  You basically stirred everything in the provided pan and baked it in the oven.  It really could be a side with a protein.  Like a spicy mac n cheese! At 400 degrees bake diced poblano and corn tossed in some olive oil, salt, and pepper for 15 minutes. Add hatch chiles, provided cream base, cheese, and gnocchi and stir everything together.   Add a pinch of salt. Place tray back into the oven for about 12-15 minutes. Top with some cotija cheese, cilantro and crispy jalapenos.  (I have these from the grocery store, they are with salad toppers).

Italian Meatloaf

  Homechef gave me a great deal if I returned to using them.  So my first box had Italian meatloaf and a spicy gnocchi dish.  I made the meatloaf today and it was so so so good!  I will make it again on my own.  Sad thing was the broccoli they sent had gone bad.  I made the meal within the 5 days of getting the box too. Ingredients: Italian seasoning Panko- couple tablespoons salt and pepper Ground Beef Ricotta cheese- couple tablespoons Garlic salt In a mixing bowl add Italian seasoning, panko salt, pepper, garlic salt, and ricotta cheese.  Mix together with your hands.   On a foil lined sheet pan form small loafs with the meat mixture.   Bake at 425 for about 15 minutes.  Check temperature.   Add marinara sauce, parmesan and red pepper flakes after cooking. This dish was supposed to be served with roasted broccoli and red peppers.  I always like mashed potatoes with meatloaf.  

Goat cheese with cranberry chicken

  This was a Home Chef recipe .  I ended up simplifying it so I can manage dinner on a week night. The brussels were halved, coated in olive oil, salt, pepper and baked in 400 degree oven for about 30 minutes.  After 10 minutes on their own I added the chicken. I coated the chicken in olive oil, salt, pepper, and cooked for a few minutes on each side on the stove top. Added the chicken to the brussels for 10 minutes.  Then topped the chicken with goat cheese and cranberry, popped back in the oven for another 10 minutes. My brussels were great.  The chicken was ok.  Dinner was made and that was all that mattered!

Home Chef Elotes Burger

This recipe was so good I'd make it again and make it for friends and family!  So so so good! While prepping everything for the burger, crack the oven up to 425 and throw in some potato wedges that have been coated with olive oil, salt, and pepper. Butter and toast the buns.  They usually send a really nice soft brioche type bun. Heat a skillet with olive oil and add corn.  Heat for a few minutes then remove from stove.   To the ground beef add some chili powder, salt, pepper and form patties.  Cook evenly in a skillet. Dipping sauce for the fries was enchilada sauce mixed with mayo. Add some enchilada sauce to the corn after cooking. Time to stack a burger! Bottom bun, hamburger patty, guacamole (they sent premade but it lacked flavor and needed lime badly), corn, cotija cheese, fresh chopped cilantro, top bun.  

Homechef Fail

This was a HomeChef fail.  It was supposed to be chicken tacos, but the precooked chicken was so disgusting it made me gag and I threw it out.  It looked like canned chicken smooshed into a square.  No way I could eat that.   I ended up putting the diced hot pepper and fire roasted tomatoes in the provided pan and popped it in the air fryer for 10 minutes.  Then I stirred in a can of Bush's sidekick fiesta black beans and put it in the air fryer again.  I topped with cheese and let that melt a bit. I made the slaw with the chipotle ranch. I assembled my tacos with the bean mixture topped with the slaw.  

Spinach Artichoke Chicken

  I decided to order some Home Chef again.  I have ordered pizza delivery too many times in the past month.   In a skillet, heat oil and add spinach, stir until wilted.  Take off heat and add drained and chopped artichoke hearts, a bit of cream cheese, mozzarella cheese, plus garlic salt and black pepper.   Recipe said to bake the chicken in the skillet, but the thicker parts were under cooked.   I would bake in the oven at 400 degrees for 22-26 minutes.  

Home Chef Sriracha Mayo Sesame Chicken

  I made this on St. Patrick's Day.  I wasn't excited about it because it wasn't Irish food.  It was really good and I was happy to eat it the next day for lunch too.  I highly suggest adding this aioli to your recipes.  It would be a good dipper for a lot of things.   Preheat oven to 425 degrees.  Combine broccoli and red peppers with olive oil, salt and pepper.  This recipe came with a lime seasoning blend that was really good.  If you have a lime, try a squeeze on broccoli.  Roast for about 10 minutes (I thought my broccoli was a bit over roasted so maybe cut it down to 8).  After the 8 minutes, push the veggies over and make room for the chicken. Pat chicken dry, top with salt, pepper, sesame seeds.   Bake next to the broccoli for 25 minutes.   Mix soy sauce, sriracha, and mayo together and top the chicken.   Homechef provided little sesame sticks to add crunch to the chicken.  They were a...

Apple Goat Cheese Walnut flatbread

I have made similar flatbread before and I know fig jam is good so I added my own after I prebaked my flatbreads.  When they are hot the jam just melts right in!  These were amazing.  Some prosciutto would put it over the top.  HomeChef meal kit this time.    

Loaded Potato Soup

 This was loaded baked potato soup from HomeChef .  I loved the crispy prosciutto over regular bacon! Now the directions were pretty off.  The potatoes were far from cooked in whatever cook time they gave, but I managed to cook it longer and added more liquid 'til they were done.   

HomeChef steak

 This steak was cut like garbage.  The other one is really nice looking.  The potatoes didn't cook.  The only highlight was the creamy sauce.  It was made from 'cream base', parm cheese, buttermilk dill seasoning, fresh chives.  

Honey Garlic Chicken

 This turned out really good and was very fast to make.  I started up with HomeChef again because they offered a couple discount boxes.   Diced chicken broccoli, diced small 2 garlic cloves, minced 1 carrot, diced small teriyaki sauce honey green onions, cut and separate whites and greens packet Uncle Ben's Jasmine rice Diced chicken seasoned with black pepper and cooked in olive oil.  5-7 minutes Bite size broccoli and should have been bite sized carrots, but some of them were huge so they didn't cook all the way!  Cook in some olive oil for about 2-3 minutes, then add green onion whites, 1/4 cup water, seasoning blend (called Asian garlic, ginger, chili), salt, pepper, and cook 4-5 minutes.   Add some olive oil to a pan, cook 2 minced cloves garlic about 30 seconds, add chicken, teriyaki, and honey.   Plate and sprinkle green onion greens over top.

 Jumped at the chance to make broccoli cheese risotto for the third time!  Also ordered a mushroom pasta.

Peanut Chicken

Homef Chef's Chicken Satay Bowl with rice and bok choy .  I got a 4 person portion of this peanut chicken because I liked it the first time I made it.  It's sauteed bok choy over jasmine rice with peanut sauced chicken (I add a lot of sriracha) and a few peanuts.

Burgers

All of the burgers I make form the meal delivery kits come out really good.  They usually have toppings and sauces that I don't normally have on hand.  

Broccoli cheese risotto

I am obsessed with this recipe!  Broccoli cheese risotto from HomeChef.  I've made it twice now.
