Mushroom risotto

I have made risotto a few times.  It is a laborious dish.  This one disappointed me as being too bland.  The red pepper flakes were the only taste.  Maybe it needed more parmesan cheese.  Anyways, I'll stick to the broccoli cheese version I've made in the future.  I may add the red pepper flakes to the broccoli version! Edit: I think the edition of paprika and maybe some lemon juice maybe some sour cream would improve this a lot.  Thin hungarian mushroom soup.

Spaghetti

I had leftover fajita veggies from the steak and chimichurri dinner.  Peppers, onion, and mushrooms went into store bought mushroom sauce with some garlic, italian seasoning and sugar.  Amylu meatballs from Costco for the win!

Chimichurri steak and black bean soup

Steaks were marinated in chimichurri sauce, and some was saved for topping after cooking. Sauce: Cilantro, parsley, olive oil, red pepper flakes, garlic, dash of red wine vinegar, squeeze of lime juice, salt and pepper.  Blend all in a blender. Black bean soup is a quick and easy recipe from Hello Fresh

Meatlof sandwiches

I pre made the meatloaf for these sandwiches a day ahead.  I knew they were going to be good!  I ate a little crumb off the pan and they were moist.  We made mashed potatoes instead of wedges.  These meal companies are obsessed with potato wedges!   Meatloaf mix was panko, onion, garlic powder, salt, pepper, ketchup, stock concentrate.  I think you could go with a tiny bit of beef broth if you don't have those concentrate packets.  You top the meatloaf with ketchup before baking. When I make trashy American meatloaf I throw in bacon and cheddar cheese and top with bbq sauce.  It would probably also make a good sandwich.  These were on a nice sour dough bread, buttered and toasted.

Rosenfeld's

Rosenfeld's was going to close, but it has been saved for a little while longer.  These sandwiches lasted 2 meals!  We also got the Jewish apple cake and potato knish, and they give you plenty of pickles on the side.

Hashbrowns made right

I am guilty of using frozen hashbrowns to make things faster for breakfast.  These are hashbrowns done the right way.  I boiled my potatoes, diced, then added some onions and peppers and spices.  I used some pepper, salt, paprika, and cayenne this time.  When you cook these in the skillet make a nice layer and let them sit.  If you stir them all around you wont get crispy bits.

Sausage and cheese stromboli

I needed quick and easy for dinner.  This was a can of pizza dough crust, ground sausage, bell pepper, shredded cheese, cream cheese, and spices.  Side salad to fill me up!
