Burgers and deli salads

We have found a deli potato salad we like!  This yellow one with eggs from Green Valley. You know the trick to getting the cheese to goo and draped over the burger?  A little water in the pan, put a lid over it, and steam it for a bit.

Rainy day comfort food

We had several weekends of rain lately.  Now we are in a heat wave!  What to make when it's hot out?

Birthday Boy's Cupcakes

Green Valley really does have the best cupcakes around.  Boyfriend likes the cookies and cream!

I made so much spaghetti

Spaghetti is the boyfriend's favorite meal.

Everyplate Chicken, rice, and roasted carrots

This was a good dinner.  I made some potstickers to go with it!  The roasted carrots were wonderful.  I can't remember exactly which chicken this was.  There are so many similar sauced chicken recipes with Everyplate.  I do get bored with the box choices sometimes and switch box providers.

Lemon pound cake

This was Krusteaz lemon pound cake.  I made it for Mother's Day.  Boyfriend's family devoured it.  I need to make 2 of these!

Hot Dogs

Nothing is better than a few dogs with onions and mustard and a little homemade potato salad. I always use Hebrew National all beef hot dogs.

Homemade Easter dinner

Ham, scalloped potatoes, cornbread, steamed broccoli, lemon cheesecake.

Cabbage Soup

More cabbage soup with mild Italian sausage links cut up.   In one large stockpot add the following: 2 tablespoons olive oil 1 cup diced white onion 1 cup diced green pepper 1 cup diced celery 1 cup diced carrot Saute until tender Add: 3-4 minced garlic cloves Stir until fragrant Pour in 4 cups of chicken broth Add 14 ounce can of diced tomatoes.  I have been using a can of Rotel tomatoes with green chilies and a little medium salsa.   1/2 head of a large cabbage, chopped Cover pot and reduce heat.  Cook until the cabbage is tender.  I usually let it cook on low for an hour at the very least.   Add seasonings: salt, pepper, Italian seasoning, whatever you like.   This is where I add meat, I've used ham and I've used sausage. Cook for another 10 minutes.

Cinnamon Cake

Krusteaz cinnamon cake.  Boyfriend's family wiped this cake out on Easter before it was even officially desert time!  I need 2 of these things next time.

Ragu

I needed to use up some vegetables.  Green peppers, onions, and carrots this time. 1 jar of mushroom pasta sauce, touch of italian seasonings and sugar. Sautee the vegetables and garlic in olive oil. Add the vegetables into the pasta sauce. Brown the ground beef with some salt and pepper. Add beef to the pasta sauce. Eat up yum!
