Cabbage Soup


 More cabbage soup with mild Italian sausage links cut up.  


In one large stockpot add the following:

2 tablespoons olive oil

1 cup diced white onion

1 cup diced green pepper

1 cup diced celery

1 cup diced carrot

Saute until tender


Add:

3-4 minced garlic cloves

Stir until fragrant


Pour in 4 cups of chicken broth

Add 14 ounce can of diced tomatoes.  I have been using a can of Rotel tomatoes with green chilies and a little medium salsa.  

1/2 head of a large cabbage, chopped


Cover pot and reduce heat.  Cook until the cabbage is tender.  I usually let it cook on low for an hour at the very least.  

Add seasonings: salt, pepper, Italian seasoning, whatever you like.  

This is where I add meat, I've used ham and I've used sausage.

Cook for another 10 minutes.
