Garlic Parmesan Chicken

This was the easiest meal ever!  Place 1-2 pounds chicken breast in the crockpot, top with a whole jar of Buffalo Wild Wings garlic parmesan sauce, add an 8 ounce block of cream cheese, and sprinkle on half a cup of shredded parmesan.  Cook on high for about 4 hours.  Shred the chicken and add in cooked pasta. I added a touch of lemon juice, sprinkle of red pepper flakes, and dried basil.   We had multicolor pasta shells.  I served with garlic bread, but a salad would have been nice.  I was able to start this after work and eat it in time for dinner.  Highly recommend

Crockpot Brunswick Stew

We had a funeral last weekend and someone brought over Brunswick Stew.  I had never had it before so I tried it and went home to make my own version. Ingredients: Boneless chicken thighs, 1-2 pounds 1 cup frozen corn, I used Trader Joes roasted corn 1 cup frozen lima beans 1 28-ounce can crushed tomatoes 1 onion, diced 3 cloves garlic, minced 1 cup bbq sauce, I would use something mild and maybe less next time.  I used Baby Ray 3 cups chicken broth 2 tablespoons apple cider vinegar 2 tablespoons Worcestershire sauce 2 tablespoons brown sugar 2 bay leaves 1 teaspoon paprika 1/2 teaspoon cayenne pepper Salt and pepper Directions:  Place everything in the crockpot, cook on high for 4+ hours, pull chicken thighs out and cut on a cutting board, return to the stew.  Serve with bread and butter.  We had sourdough

New Year: Pork and saurkraut

Place a seasoned pork loin in the crockpot.  This one was rotisserie seasoned.  Add 2 cans of saurkraut.  Add a diced apple.  Cook until pork is falling apart.  Mine cooked almost all day.  I did end up making the leftovers into a sort of reuben sandwich.  I used some thousand island and cheese and it was awesome.

Beef stew no potatoes

I'm not eating potatoes still, so this beef stew uses parsnips instead. Ingredients: 2 lbs stew beef, rolled in flour seasoned with salt and pepper.  Browned in a little oil. 4 carrots, diced 4 parsnips, diced 3 celery stalks, diced 3 cloves garlic, minced 1 can drained green beans 1 32 ounce box beef broth water as needed 1 teaspoon wocestershire sauce 3 bay leaves 1 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon paprika dash allspice Brown beef on stovetop Add all ingredients to crockpot.  If beef stock alone doesn't cover everything add a bit of water. Cook on high for at least 6 hours When meat is tender it's time to make a cornstrach slurry. Mix 2-4 tablespoons cornstarch in a measuring cup with some of the hot broth.  Stir together.  Add slurry to the crockpot and let it heat through and thicken slightly. Serve stew with biscuits or rolls.  Sprinkle with parsley.

Copycat Beef and Cheddars

1 chuck roast 1 onion thinly slices 1 packet of Good Seasonings Italian Seasoning Dash Worcestershire Sauce Dash onion powder Dash garlic powder Tablespoon or 2 of brown sugar A good drizzle of BBQ sauce Some chicken or beef broth in the bottom of crockpot.  Not to cover the entire roast! Throw everything in crockpot until the beef is falling apart and shreds easily. Bun of your choice.  I toasted the top bun with a little garlic salt, onion powder, parsley and a smear of plant butter. Add cheddar cheese or I used American cheese slice. You can add a little more bbq sauce to sandwich if you like.  My boyfriend likes it saucy,

St Patrick's Day corned beef

We went to the beach house for St Patrick's Day.  I have never gone to the Ocean City parade before!  It was very long.  We had a large corned beef from Aldi in the crockpot for dinner though.  I think next year I will make the potato, carrot, cabbage separate.  They seemed over done.  The corned beef was perfect though.  It slow cooked about 12 hours on low.   Corned beef Beef broth Seasoning packet Mustard for serving

Slow Cooker Pot Roast with Mashed Potatoes

We spent a week in Pigeon Forge TN.  It was amazing and I'm dying to go back.  We had some good pot roast at Dollywood's Aunt Grannies and Ham and Beans restaurants.   Ingredients: 1 chuck roast 3 carrots 2 celery stalks 6 garlic cloves 1 onion 1+ cup beef broth 2 teaspoons Worchestershire sauce 2 tablespoons tomato paste Olive oil drizzle salt and pepper dried parsley (there was supposed to be dried thyme and rosemary, but I didn't have those) Directions: Place roast in the crockpot and season well with salt and pepper Add the beef broth, worchestershire, and tomato paste and try to stir them up. Beef Stew in the crockpot

All of us were supposed to go to Hershey Park.  It rained all day and Hershey actually closed 2 hours early.  I cancelled our trip and invited everyone over for beef stew instead.   2 lbs stew meat, rolled in flour seasoned with salt and pepper.  Browned in a large pot with oil. 4 carrots, diced. 3 stalks celery, diced 5 red potatoes, cubed into about 1 inch pieces. 1 can of green beans, drained 1 onion, large dice 1 large clove of garlic, diced 32 ounces of beef stock.  I also added a little water to help cover all the ingredients. 1 teaspoon worcestershire sauce 2 bay leaves 1 teaspoon salt 1 teaspoon sugar 1/2 teaspoon pepper 1/2 teaspoon paprika dash allspice Place all of the above ingredients in the crockpot and cook on high about 6 hours. Do not toss this in the crockpot yet! 2-4 tablespoons cornstarch. Beef Chuck Steaks

So, I don't really go to the grocery store.  I have been doing curbside pick up for groceries ever since covid hit in 2020.  This was a substitution that I wasn't sure was going to work out, but ended up very tasty anyway.  Originally I was trying to order a chuck roast to make my crockpot Italian Drip Beef sandwiches.  The shopped substituted the chuk steaks when they couldn't find a chuck roast.  Then the shopper and I texted back and forth about the bread substitution and then I got home and there was no bread in the order :(  I usually don't have issues with grocery pick up at all.  This just was a bad week.   I made these chuck roast steaks the same way as the Italian Beef in the crockpot, but without rolls I put it over some mashed potatoes and added some microwaved peas.  It was very yummy and those two chuck steaks were eaten.   2 chuck beef steaks 1 packet of Good Seasonings Italian 1 can of beef consomme Some liquid a...

Too much chili

I made a huge amount of chili when we had a tropical storm dump rain on us for a weekend.  I got tired of just eating chili in a bowl so I made chili topped tots!  Chili dog was going to be next, but I ended up freezing the chili.   My slow cooker chili recipe is 1 lb ground beef or ground turkey (browned with salt and pepper) 1 packet of chili seasoning 1 jalapeno, diced 1 onion, diced 1 green pepper, diced 2 cans of beans.  I usually use all kidney, but I have mixed kidney and black beans too 1-2 cans tomato sauce Throw in crockpot on low 8 hours or high 4 hours.  I have done this recipe on the stove top too.  I usually let it simmer for at least an hour.

Beach Housing

Pulled pork sandwiches with coleslaw, pasted salad, mac n cheese, and watermelon Easiest pulled pork Place a pork butt in a crockpot with cheap grocery store brand root beer. Cook on low for about 8 hours.  If your pork butt has a bone it should pull right out. Use one of those large metal disposable pans to pull the bits of pork out to shred. Keep about a cup or two of the crockpot liquid. Discard the rest of the liquid. Add the pork back into the crockpot, add some of the liquid back and add your bbq sauce.  Heat through and serve.

Crockpot Chili

2 cans tomato sauce 2 cans kidney beans, drained 1 green pepper 1 jalapeno 1 onion 1 lb ground beef, browned 1 packet chili seasoning Stir all together and cook in crockpot on low for about 4 hours.   Add any toppings you like.  I do cheese, sour cream, hot sauce, and tortilla chips.  The boyfriend likes his with cornbread.

Rib Night

We had 'family' dinner Friday which means the boyfriend and my friends.  I made collard greens for the first time, sweet and spicy coleslaw which was maybe too spicy this time, corn on the cob, mac n cheese, cornbread, water melon, and a lemon cake for dessert! BBQ PORK RIBS Rub Ingredients: * 1 1/2 cups dark brown sugar * 1 1/4 cups sugar * 1/2 cup salt * 1/4 cup ground black pepper * 1/4 cup paprika * 2 to 4 slabs baby back ribs *** to add some heat try 1-2 tablespoons cayenne *** Directions: Combine all the ingredients for the dry rub in a mixing bowl. Rub the ribs with the dry rub. Lay on a doubled sheet of aluminum foil. Wrap ends over first, then fold up sides and crinkle tightly closed around rack (as little air as possible, without tearing the foil). Let marinate in refrigerator for 8 hours or overnight. Preheat oven to 275 degrees F. Without unwrapping foil cocoons, place ribs on a large baking pan lined with more aluminum foil (the juice will leak and you don't ...

German Fest! Day of recipes

Crockpot Red Cabbage   This needs to be started the morning of the party because it takes 6 hours on low to cook.  This photo is the before.  You will see the after photo a bit further down.   I had to double the vinegar, sugar, seasonings etc because the cabbage didn't have enough tang when I taste tested partway through the cooking process.   Ingredients for Crockpot Red Cabbage: 1/2 head  red cabbage  (chopped) 1 red onion (chopped) 3 cloves garlic (sliced) 6 tablespoons  apple cider vinegar 2 tablespoon sugar 1 teaspoon salt 1/4 teaspoon  white pepper 4 tablespoons water Hot German potato salad.  I have made this recipe before, but I ended up doubling it for the party!  This comes together quickly and needs to be done right before eating.  There are two steps that can be done ahead of time and that is the cooking of the bacon.  I cooked the bacon earlier in the day and left the bacon grease...

Roast Beef Sub

In the crockpot I added 2 boxes of beef broth, one onion, carrots, red potatoes, french onion dip seasoning, and a chuck roast.  Cooked on high for about 5 hours. I ended up throwing it all in tupperware and got around to eating it a day later. To re-heat, I cut the beef into bite size pieces added it to a pot with some of the broth and heated it through. I buttered and toasted a hoagie roll in the air fryer. Then I added the hot beef and provolone cheese. Back into the air fryer just to melt the cheese. So messy and good!   The potatoes I ended up microwaving for 2 minutes in a glass container.  Then I added butter and sour cream and mashed with a hand masher.  They tasted fantastic!
