We had a funeral last weekend and someone brought over Brunswick Stew. I had never had it before so I tried it and went home to make my own version.
Ingredients:
Boneless chicken thighs, 1-2 pounds
1 cup frozen corn, I used Trader Joes roasted corn
1 cup frozen lima beans
1 28-ounce can crushed tomatoes
1 onion, diced
3 cloves garlic, minced
1 cup bbq sauce, I would use something mild and maybe less next time. I used Baby Ray
3 cups chicken broth
2 tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
2 bay leaves
1 teaspoon paprika
1/2 teaspoon cayenne pepper
Salt and pepper
Directions: Place everything in the crockpot, cook on high for 4+ hours, pull chicken thighs out and cut on a cutting board, return to the stew. Serve with bread and butter. We had sourdough
