Christmas Cookie Platter

I did the usual cookie platters for Christmas Eve dinner and Christmas day.  No new recipes.  Oreo truffles, Buckeyes, Snickerdoodles, frosted sugar cookies.    

Oreo Truffles

  32 oreos crushed in a food processor. 1 package of softened cream cheese added to the food processor with the crushed cookies. Mixture should look like mud when combined. Take small spoonfuls of oreo mixture and put on a sheetpan. Chill in the freezer. Roll into balls. Create a double boiler with a large pan of water under a smaller pan with candy melt sitting on top. Use a toothpick to dip oreo ball into the candy melt. Place on a sheetpan with wax paper and sprinkle with holiday sprinkles right away. Chill the oreo truffles in the freezer until ready to eat. Let thaw for a few minutes before serving.

Oreo Truffles

  Ingredients: 36 Oreo cookies, crushed in food processor 1 8-ounce package of cream cheese, softened 1 package of ghiradelli dark chocolate candy melts holiday sprinkles Directions: Crush 26 Oreo cookies in a food processor.  Add the cream cheese and pulse cream cheese and cookies together until it resembles mud.  Scoop small amounts of filling onto wax paper and place in freezer.  Once frozen, roll scoops into balls and freeze again.  Melt candy melts using a double boiler.  Using a toothpick dip cookie ball into candy melt, place on wax paper, sprinkle with holiday sprinkles.  Place back into the freezer.

Christmas Baking

  Oreo Truffles Crush 1 package of oreo cookies in the food processor.  Then add 1 package of softened cream cheese and blend until the mixture looks like mud.  Scoop 1 tablespoon of oreo mixture onto wax paper and pop in the freezer.  Roll into balls when they are frozen.  Freeze 10 minutes at least.  I froze mine over night.  Dip in melting chocolate.  I used Ghirardelli dark chocolate melting wafers, which I melted over a double boiler.  I used a toothpick to dip each ball into the chocolate.  While the chocolate is still wet I put on holiday sprinkles.  I then froze everything again for the chocolate to set.  I am keeping my truffles in a foil lined holiday tin in the fridge.   Peppermint Blossoms Makes about 36 cookies 1/2   cup   unsalted butter   room temperature 3/4   cup   sugar 1   egg 1/2   teaspoon   pure peppermint extract 1   tablespoon   whole milk 1 1/4...

Went to Philly for the flower show and I always stop at the Amish market for some whoopie pies to give my co-workers.  One of the chocolate shops in the market had a chocolate version of my work truck!

Low Iodine Candy

I went to Trader Joes for the first time since starting this low iodine diet. I looked through the assortment of candy/chocolate covered fruits and nuts. I found these dark chocolate mint creams to be perfect! No salt and it didn't say milk in the ingredients. This blogger has photos and reviews

Leftover PB Frosting?

So you know how last weekend I made brownies with PB frosting? I had leftover frosting. I just put it in tupperware and stuck it in the fridge. Anthony and I decided we should dip some graham crackers into it, but then we went a little further turning it more into a candy. Quick and Easy Treats?

So I have two quick and easy recipes to share for those who are looking for something to make for the holiday last minute ;) Chocolate Fudge 1 8 ounce package cream cheese 3 squares unsweetened baking chocolate 1 square semi sweet baking chocolate 1 teaspoon vanilla 4 cups powdered sugar Beat cream cheese and powdered sugar until smooth. Top Chef Party

We invited some friends over to watch the Top Chef finale and of course we made food :) my husband wanted everyone to make a twist on childhood favorites but not everyone did that. Here is my twist on Tacos MEXICAN WONTONS Square wonton wrappers 1 can of black beans drained Shredded mexican cheese green onion, the white and green parts chopped taco seasoning garlic ground turkey sausage (I buy the links that say HOT and break them apart) Place wonton squares into mini muffin tins and bake at 350 until the edges are brown Brown the sausage with the seasoning and garlic Stir in the black beans, cheese, and chopped green onion Spoon the mixture into the baked wonton shells and put back in the oven. Oreo Truffles

Every year for the past three years I've been making these Oreo Truffles The original recipe is from http://www.kraftfoods.com/kf/recipes/easy-oreo-truffles-95085.aspx There seem to be a few variations so here is the recipe I use 1 package Oreos 1 8 ounce package light cream cheese about 6 pieces of chocolate bark Fun sprinkles In a food processor I grind the Oreos into a fine dust Then I add the cream cheese, its best if it has softened I process again.
