Apple Pie Cinnamon Rolls

1 can apple pie filling 1 can of cinnamon rolls cut into 4ths Stir together and bake at 350 degrees for about 40 minutes.  Drizzle the frosting on after.  Couldn't be easier!

Mom's Apple Cake

 I was able to throw together this applecake in 30 minutes on a Friday after work!   Fresh Apple Cake Cream Together in Stand Mixer: 1 cups sugar 1 cup oil 2 eggs 3 tablespoons vanilla Sift Together in a Bowl: 3 cups flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon cinnamon Add the dry ingredients into the creamed mixer in the stand mixer. Cut up 2 apples (2 cups worth of apples) into a small dice and fold them into your mixture.  It will be thick! Press into a well grease bunt pan.  Bake at 350 degrees for 1 hour.  Let the cake cool before turning it out onto a cake plate.

Apple Braid

  INGREDIENTS: Puff pastry sheets, thawed 1 egg water 3 Granny Smith apples, diced 1/4 teaspoon salt 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 2 tablespoons sugar 1 tablespoon lemon juice 1 tablespoon flour DIRECTIONS: Preheat the oven to 400 degrees Smoosh edges of thawed pastry sheets to form one large rectangle. Place on a silpat.  The filling can overflow and make this very hard to remove from a pan.  You can place it on parchment paper instead. In a saucepan combine apples, salt, cinnamon, nutmeg, sugar, lemon juice, and flour until apples have softened.   Let filling cool a bit. Spoon filling down the center of the puff pastry. Take a knife and cut slices into both sides of the puff pastry forming ribbons. Fold the ribbons over the filling making a braid. Tuck the end of the braid in well.  I usually have to trim some excess puff pastry dough off. In a small bowl combine the egg and about a tablespoon water.   With a fork whisk them together...

German Fest! Day before recipes

I invited my best friends over for a German Fest on Sunday.  I made a few menu items ahead of time, like this cucumber salad.  When you make this ahead of time it gives the vinegar time to mellow out the onion. This recipe comes from The Kitchn . Ingredients for cucumber salad: 2 washed, peeled, and sliced cucumbers (this was plenty for a group of 4) 1 small red onion, sliced 1/4 cup Sour cream 1 tablespoon Apple cider vinegar 1 tablespoon olive oil 1 teaspoon brown mustardSugar Salt & pepper 1/4 cup Fresh dill, chopped All of these ingredients get combined in a bowl and then refrigerate.  One tip is to set the sliced cucumbers in a colander in the sink and salt them.  Let them sit for about an hour to release water.  This will help prevent your dressing from getting too watery.   I also made this apple braid a day ahead.  We served it with whipped cream, the fancy kind from a can! Beach Food

Mule in a mini bucket Puff pasty apple danish Puff Pastry Danish Recipe Prepare the filling. Beat the cream cheese and sugar in a medium bowl until smooth. Beat in the egg yolk, lemon juice and vanilla until combined. Set aside. You will have a bit of filling left over, you can decide what to do with it or only make 2/3 of a batch if math is your thing. Preheat the oven to 400 F. Line 2 baking sheets with parchment paper. Roll each puff pastry sheet into a 12 x 12 inch square. Cut each into 9 pieces. Prick with a fork several times in the center. Beat the egg white and water together and brush onto each puff pastry square. Place a scant tablespoon of cream cheese filling onto each square and then a teaspoon of your choice of jam, jelly or chocolate chips. Bake at 400 F for 15-18 minutes or until puffy and lightly browned. Cool on wire racks. Make the glaze by beating the powdered sugar with enough milk until smooth. Drizzle on cooled Danishes. Apple Braid

This was the first thing I baked in my new house :) an apple braid that I shared with a co-worker.

There is a nice farmer's market at the beach.  This is lemon Amish friendship bread and apple crumb topped pie and vanilla ice cream.  You can't eat too many desserts.

Breakfast

Sunday breakfast!  I usually make bacon for breakfast but we finally found a store that sells Logan's sausage.  We tried it at the Metro Cooking Show and almost all of their sausage is sugar free. New favorites

Like everyone I'm trying to eat a little healthier this year. I have cut soda out of my diet. I've gone a week without it and I don't think I need it in my life. I will see if I can go a month without it and I'll blog if I make it. I tried several new things recently that I have liked I had Michelinas frozen macaroni and beef today for lunch plus I had a third of a leftover triple decker club from last night. I think if I only had this frozen meal I would have been hungry later on but I had something to go with it. I've also been eating Pacific Rose apples. I LOVE them! I usually only eat sour Granny Smith apples but I really like these big juicy apples called Pacific Rose. They are so juicy I need to eat them with a few napkins. For dinner tonight I tried a few new Trader Joes products. I baked the frozen falafel in my toaster oven, put it on some pita with lettuce and Trader Joes cilantro and chive yogurt (Greek Style) dip. Apple Braid

For the apple braid I used this recipe . I had a hard time with the dough sticking to the paper but I will be making this recipe again. It was just so easy and it tasted great.

Crumb Topped Apple Pie

I used my usual apple pie filling recipe pastry crust 1 cup sugar 1/3 cup flour 1 teaspoon nutmeg 1 teaspoon cinnamon dash dalt 8 cups thinly sliced tart apples (Granny Smith) 3 tablespoons butter then I made a crumb topping for my pie Ingredients Brown Sugar- 1/2 cup Oats- 1/2 cup Chopped Walnuts- 1 small packet Butter- I used too much :( and it made my pie soupy even after cooling it was a little too soupy. I used 1/2 cup butter, please only use 2 tablespoons! Heat oven to 400 degrees bake about 40 minutes. Watch your pie because the crumb topping can burn

We had a fall party!

Yesterday we had a fall party. We made massive amounts of food and do not have leftovers! It was crazy. We had ribs, bbq kielbasa, chili, brie and pear salsa quesadillas, baked apples, sweet potatoes, jalapeno popper dip, my mom brought two cakes, an apple and a pumpkin, and my neighbors brought over food too! Finally I have a photo heavy post :) My crockpot chili. We had cheddar, sour cream, cornbread, and tortilla chips as toppings. This was a double batch. 2.5 pounds of meat and none of it leftover The kielbasa was sliced and browned in a skillet and I made my meatball BBQ to pour over the kielbasa bites. This was two packages worth of beef kielbasa and there was not one bite leftover We bought 6 racks of ribs at Costco (unsauced & unseasoned). Anthony did a dry rub the night before, got up early the next day to cook them in the oven for about 2 hours, then he put them on the grill on tin foil because they were already falling apart and he sauced them at that ...

Apple Cake

This is the recipe my mom uses. I love how its so simple to put together. We are having house guests this weekend and its perfect for dessert or breakfast :) Fresh Apple Cake Cream Together: 2 cups sugar 1 cup oil 2 eggs 3 tablespoons vanilla Sift together: 3 cups flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon cinnamon Add 2 cups apples cut fairly small. Mix all together. Makes a thick batter. Press into a greased tube pan (I used a bunt pan). Bake one hour at 350 degrees.

Apple Sauce

Since we went apple picking on Sunday I have a lot of apples. I peeled and diced about 10 apples I threw them in the crockpot with 1/2 cup water and 1/2 cup sugar plus dashes of cinnamon. Now they are baking in the crock. When the apples are soft I'll put them in the food processor and we'll have some hot applesauce for dinner!

Lazy Man's Cabbage Roll Casserole 1 pound ground meat, cooked with garlic, salt, pepper, a little hot sauce, and olive oil Cooked brown rice from one of the Boil in the Bags Head of cabbage shredded Mix ingredients together in a glass lasagna dish Pour on tomato pasta sauce Bake at 350 degrees until ingredients are heated through and pasta sauce is bubbling Add parmesan cheese I ended up with extra filling that I put in two baking dishes to just eat :) 2 pastry crusts 1 cup sugar 1/3 cup flour 1 teaspoon nutmeg 1 teaspoon cinnamon dash dalt 8 cups thinly sliced tart apples (Granny Smith) 3 tablespoons butter Heat oven to 425 Put 1 pastry crust into a glass pie dish Stir together sugar, flour, nutmeg, cinnamon and salt; mix with apples. Turn into pastry-lined pan; dot with butter. Cover with top crust which has slits cut into it; seal and flute the crusts together. Cover the edges with foil to prevent excessive browning.
