Pork Chops with green onion salsa

This is the first time I've messed up and had a meal delivery sent that I didn't hand pick the meals.  Hello Fresh picks 3 meals and then I usually edit the meals before the box ships.  This turned out really great even though it is something I probably wouldn't have ordered.  Pork Chops with zesty green onion salsa also came with black beans and rice.  The beans are crazy good.   Ingredients: 1 can black beans 1 roma tomato 2 cloves garlic chicken concentrate Southwest spice oil 1/2 cup water salt and pepper 1 tablespoon butter Directions: Drain and rinse black beans.  Wash and dice roma tomato.  Mince garlic cloves.   Heat a drizzle of olive oil in a medium pan.  Add tomatoes and garlic and cook 2 minutes.   Add bean, stock concentrate, water, southwest seasoning, salt, and pepper.   Simmer until thickened, about 5-10 minutes. Stir in 1 tablespoon butter at the end.   *We didn't drain and rinse our beans, so it took a little longer to get our mixture to thicken

Memorial Day Lemon Cake

  This cake was a little involved to make, but it turned out great and everyone seemed to enjoy it! Ingredients: 1 box lemon cake mix 2 boxes of instant lemon gelatin 1 box of instant lemon pudding 1 cup hot water 1 cup milk 8 ounce container of thawed whipped topping (like Cool Whip) Directions: Spray bottom of 9x13 pan with cooking spray.   Make the cake according to box directions in a 9x13 pan.   When cake comes out of the oven poke holes all over the top with a fork. Combine 1 cup hot water with 1 package of instant lemon gelatin. Pour over the cake. Place cake in the fridge until cool. In a large bowl combine remaining instant gelatin package, instant pudding package with 1 cup milk.   Stir in whipped topping. Refrigerate cake until serving.   *I messed up and bought cook and serve lemon pudding, so I actually had to make the lemon pudding.  If this happens to you, just follow the pudding directions.  Water, sugar, pudding, 2 egg yolks, combine until it boils, then let it cool to

Memorial Day Pasta Salad

  This is the Wagon Wheel Pasta I have made before, but not in a very long time.  I didn't get wagon wheel shaped pasta, but bow ties for this weekend.   Ingredients: 1lb wagon wheel pasta 1 can black beans, drained and rinsed 1 10oz package frozen corn  2 medium tomatoes, seeded and diced 8oz shredded Mexican-blend cheese 1 1/2 cups salsa 1 package of Good Seasoning's Italian dressingmade according to package instructions.  (red wine vinegar, water, olive oil) 3-4 tbsp lime juice 1 tbsp cumin 1-2 tsp chili powder 2 garlic cloves, minced freshly ground salt & pepper 1/2 cup chopped fresh cilantro 1 avocado, diced Directions: Cook the pasta al dente according to package directions. Drain and rinse with cold water. In a large bowl, combine the black beans, corn, tomatoes, salsa, and cheese. Add the cooled pasta and mix well. Harissa Roasted Chickpea Bowl

This was a vegetarian meal from EveryPlate .  I really enjoyed it.  I am missing the guacamole part because I had eaten it earlier in the week with chips.  The ingredients were very pantry stable so I made it a week or so after the box was delivered.  I think it would be great with some fresh avocado slices.  The roasted carrot was so good I would actually roast more than two carrots. Ingredients: 2 carrots 1 red onion cilantro lemon couscous chickpeas prepared guacamole  sour cream harissa powder vegetable stock concentrate salt pepper olive oil butter Directions:  Preheat oven to 425 degrees. Wash and dry all produce. Trim, peel, and cut carrots on a diagonal into ¾-inch-thick pieces. Drain and rinse chickpeas. Halve and peel onion; cut half into ½-inch-thick wedges. Finely chop remaining until you have ¼ cup. Zest and quarter lemon. Toss carrots on one side of a baking sheet with a drizzle of oil, ½ tsp harissa, salt, and pepper. Birthday Burgers

  The boyfriend requested burgers for his birthday party.  I made a swiss mushroom burger with bacon and avocado this time around.  I also made some baked beans, cut up watermelon, and bought some Amish style macaroni salad.   Baked Beans : 1 can Bush's Baked Beans with brown sugar and bourbon 3 tablespoons brown sugar 1 tablespoon yellow mustard 2 tablespoons ketchup 3 strips of cooked bacon Place all ingredients in a pan and bring to a boil, simmer until you are ready to eat!

Margarita Cupcakes

  It is the boyfriend's birthday!  He is not a chocolate person so I decided on these lime cupcakes. Margarita Cupcakes Recipe from Confections of a Foodie Bride blog Ingredients: * 1 package (18.25 oz. white cake mix (no pudding in the mix) * 1 can (10 oz.) frozen Margarita mix, thawed (undiluted) only use 8 oz! * 3 egg whites * 2 tablespoons vegetable oil * 1 tablespoon grated lime zest.  I used 3 limes Yield Makes 24 cupcakes.  I ended up with a few less than 24 Directions: 1. Preheat oven to 350° F. Line standard muffin pan with baking cups. 2. In large bowl, combine cake mix, Margarita mix, egg whites and vegetable oil using electric mixer. 3. Stir in lime zest; mix completely. 4. Fill prepared pans 2/3 full. 5. Bake 20-22 minutes or until toothpick inserted in center of cupcake comes out clean. 6. Cool in pan on cooling rack 5-8 minutes. 7. Remove cupcakes from pan; cool completely. 8. Frost cooled cupcakes with icing and garnish, if desired, with a strawberry and/or lime twi

EveryPlate Sloppy Joes

Pork sloppy joes with pickled red onions.  I've made this one before and it was so good I ordered 4 servings last week.  

Bahn Mi in a Bowl

  This was a disappointing meal from EveryPlate.  I have plans to improve upon it.  Deconstructing a Bahn Mi from a sandwich to a bowl dish is a great idea.  I'd use maybe a cooked pork cutlet and various pickled vegetables and herbs.  Daikon, carrot, cucumber, onion, and jalapeno are a good idea. To pickle the veg: boil in a saucepan 1/2 cup rice wine vinegar, 1/4 cup sugar, 1/4 cup water.  Let cool and add the vegetables.  Pickle at least 30 minutes.  Top the bowl with fresh cilantro and a squeeze of lime.  Fresh basil and fresh mint could be used too.  

Chinese Hot Pot

  I love Hot Pot Hero!  I order mushroom broth, beef combo, noodles and all the extra veggies and mushrooms I can.  When I go to the sauce bar I like a little soy, peanut butter, chili oil, green onion, and diced chilis.  

Swiss Mushroom Burgers

  The secret to making the cheese wrap around the burger is to add a little water, put a lid over the burgers, and let them steam! These burgers are topped with sauteed onions, mushrooms, lettuce, mayo, and spicy brown mustard.
