Cornbread Muffins

 My favorite cornbread has a touch of sweetness.  I use Krusteaz brand mix!

Prosciutto with goat cheese and arugula

  Heat oven and bake the flatbread bare for about 10 minutes.   Heat olive oil in a skillet and add diced onion.  Cook until almost brown.  Add a little water and sugar and cook until pan is dry again. Spread fig jam on warm flatbread, top with cheeses, onion, proscuitto.   Bake in oven until cheese is melted. Top with arugula and a drizzle of olive oil. Cut into pieces. Other good toppings are toasted walnuts, crushed red peppers, and sliced apples.

Beach House Chili

  Cooler weather, college football, chili season!   Krusteaz brand honey cornbread.  I always like my cornbread on the sweet side

Jalapeno gravy pork chops with roasted carrots and mashed potatoes

 This meal was really good.  I boiled the yukon gold potatoes and carrots together before I roasted the carrots with olive oil, salt, and pepper.  They came out perfectly cooked.  I don't like Everyplates roasted potatoes so I usually make mashed potatoes.  Perfect to go with the gravy the recipe made.  I added a package of mushrooms to the gravy and it was the perfect meal!
