Living Insanity's Loving Food

We purchased 2 10-item sampler tickets for Busch Gardens Mardi Gras event.  We had rum runners, hurricanes, margaritas, crawfish boil, beignets, cajun chicken, gumbo, cajun meatballs, etc.  All were pretty good.  The beignets were so good we got them both days.   We went to Matchsticks BBQ for dinner.  I got pork with mac n cheese and slaw on top.  Boyfriend got pork with greens and beans on top.  These were so good!  I highly recommend this place.  You wont go hungry and it was fantastic.  They do sell out so go early.   Dessert was the limoncello cake from Sal's by Victor.  We had Sal's last time we visited.  My pasta was bland, but the cakes were so good I wanted to get it again this visit.   Next dinner night was Olde Towne Pizza and Pasta.  Classic Italian American dishes.  This was baked ziti with beef covered in a lot of cheese.  Maybe too much cheese!  I enjoyed it though.  Grilled cheese and tomato soup and some turkey chili.  

I had frozen half of the chicken burritos and homemade enchilada sauce a while back.  I thawed them out and placed everything in a casserole dish to bake.  I also made some beef taco meat, Spanish rice, guacamole, and margaritas!  I ordered jumbo oreo cupcakes from Green Valley.  It was a successful party!  

My turkey meatballs, tossed with the asian medley that you steam in the bag, over microwave jasmine rice.  I tossed everything in a spicy teriyaki sauce with a dab of butter at the end.  

These chicken and vegetable potstickers from Costco are my favorite fast meal.  If you don't know how to do pan frying to get that crisp bottom, listen up! Heat oil in pan, not too high Place frozen potstickers in. Once they have a golden color, toss in some water and cover with a lid. This will steam the potstickers through. When they feel soft, remove the lid and let the water evaporate completely. Don't let them burn at this point, if there is too much water dump some out. They will have a nice crisp bottom and a soft texture everywhere else. Enjoy!

  We can't have steak dinners all the time.  I made turkey meatballs into meatball subs with a side of trashy tots.  I made a batch of 20 turkey meatballs, added them to pizza sauce that I heated on the stove with a little sugar and Italian seasonings.  I sliced hoagie buns, added the meatballs, some provolone, and baked them in the oven until the cheese melted and the subs felt toasted.  The tots I made in the air fryer.  When they were done I put them on a sheet pan and put shredded cheddar and bacon on top.  When finished top with sour cream and chives!  

It's Lunar New Year! We had to have noodles for longevity so we went out for ramen.  This was the perfect broth.  Turns out it had peanut paste and when I make my hot pot mix in I always use peanut butter.  Head to Akira ramen & Izakaya in Columbia for some!  

  There was a time during the pandemic where we worked our 40 hour weeks, but were only paid 75% of it.  They decided this year they would give us the money we earned during that time, but did not receive.  I just got that money on my last paycheck so to celebrate I did a splurge meal.  I bought two porterhouse steaks, mushrooms, baking potatoes, asparagus, and some cupcakes.  It ended up being a fantastic dinner for about $55.  

  This was a fantastic meal from Hello Fresh .  I added my own bacon.  I really like bbq chicken pizza with jalapenos, but I didn't have any.  The recipe had ranch dressing to drizzle but I tried it on one piece and decided I didn't really need it.  I tried to order this recipe before, but Hello Fresh forgot a few of my ingredients so I never made it.  

  Corn chowder from Hello Fresh .  It has Old Bay in it.  It's the most Maryland thing I've ever made LOL

I have tried the birria quessdilla and the chicken tacos.  I asked for double green sauce.  I never tried the red one because the green was so good!
