This recipe was on the difficult side and took a long time to make. It was very tasty in the end.
The curry sauce and chicken:
Cut chicken into bite sized pieces. Marinate the chicken in sour cream, with sugar and salt.
In a large pot add olive oil. Then add garlic, onion garam masala, turmeric, salt and pepper. Stir until fragrant and then add in tomato paste, and 1/2 cup of water. Bring to boil and then turn the heat down. Simmer about 10 minutes. Next add the chicken into the curry sauce and cook through, about 5-7 minutes.
The veggies:
Small dice on the potatoes, carrots, and onion. Put in a microwave safe bowl and cover with cling wrap. Microwave about 6 minutes. Salt the veggies.
The veggies are finished off in a skillet with olive oil. Add a little mustard and turmeric and let them get crusty. Squeeze lemon juice over them when finished.
The rice: This was just rice boiled in water with turmeric added.
