Hoisin Pork Sloppy Joes

I have never made sloppy joes before.  I ordered Hoisin Pork Sloppy Joes from EveryPlate and made them as instructed.  They were just ok.  The next day I ended up mixing in slaw, rice, peanuts, and crispy wontons and just eating it like egg roll in a bowl.  

Lemon Thyme Spaghetti

Another hit from EveryPlate, Lemon Thyme Spaghetti .  I didn't make mine with chicken I ended up using some turkey keilbasa.  

Grilled Flank Steak

Flank Steak Marinade: 1/2 cup Vegetable Oil 1 Tablespoon Yellow Mustard 1/4 cup Red wine vinegar Crushed Black Peppercorn 1 Tablespoon Minced Garlic Juice Of 1 lemon 1/3 Cup Soy Sauce Place flank steak in a large ziplock bag and add all marinade ingredients.  Marinate in the fridge for about 2 hours. Prepare grill the grill!  Stack coals, light, and let coals become a bit ashy for 15 minutes.  Add grill grate and brush on oil.  Let grill grate preheat 15 minutes. While the grill is getting hot, get all your favorite fajita toppings ready.  I cooked peppers and onions on the stove, microwaved some flour tortillas, diced tomato, avocado, lettuce, shredded cheese, and put out the sour cream, salsa, and hot sauce.   When the grill is at medium-high heat grill the flank steak about *10 minutes per side.  This time will change based on the thickness of your flank steak and your doneness preference!  Our flank steak was very thick, about 2 inches th...

Plain Cheesecake

Happy Mother's Day everyone!  I made mine a cheesecake. Crust: 2 cups graham cracker crumbs 1/3 cup butter, melted 2 tablespoons sugar Cheesecake filling: 3 packages (8 ounces each) softened cream cheese 1/2 cup sugar 3 tablespoons flour 1 teaspoon vanilla extract 2 egg whites 1 cup whipping cream  Combine crust ingredients to make crust; press into bottom and up sides of a greased 9 inch spring form pan. Chill 1 hour or until firm. In a mixing bowl, beat cream cheese, sugar, flour, and vanilla until fluffy. Add egg whites; beat on low until just blended. Stir in cream. Pour the cream cheese filling into the crust.  Bake at 375 degrees for 35-40 minutes or until center is nearly set. Refrigerate overnight.  *I always wrap the bottom of my springform pan in foil so butter doesn't leak out and make a mess*

I think this is one of the best box delivery meals I have made.  Cheese stuffed meatloaf , with a glaze, and smothered in veggies.  I did not roast the potatoes they sent.  I ended up adding a few red potatoes and doing mashed potatoes.  I just like mashed potatoes with meatloaf!  My mashed potatoes were made with sour cream, butter, milk, salt, pepper, and garlic powder.  Also used the air fryer to do fried zucchini chips.  They weren't quite right.  We will try again with another recipe.

Creamy Dill Potato Salad

Ingredients: Red Potatoes, several Celery, 2 stalks diced Fresh Dill, large handful Mustard, a few tablespoons Mayo, about a cup Salt, to taste Pepper, to taste Pickle Juice, to thin dressing out Pickle Spear, diced

Cobb Salad

We had some big ole Cobb salads for dinner last night!  I always start with cooking the bacon so I can cook the chicken in the bacon fat afterwards.  Ingredients: Romain Lettuce, chopped Chicken Tenders, chopped Bacon, Crumbled Feta Cheese, Crumbled (my boyfriend doesn't like blue cheese) Red Onion, finely diced Avocado Tomato Cucumber Croutons Dressing: 1 Shallot 1 teaspoon Mustard 2 Tablespoons Red Wine Vinegar 3 Tablespoons Olive Oil Salt Pepper Garlic Sugar Honey
