Happy Mother's Day everyone! I made mine a cheesecake.
Crust:
2 cups graham cracker crumbs
1/3 cup butter, melted
2 tablespoons sugar
Cheesecake filling:
3 packages (8 ounces each) softened cream cheese
1/2 cup sugar
3 tablespoons flour
1 teaspoon vanilla extract
2 egg whites
1 cup whipping cream
Combine crust ingredients to make crust; press into bottom and up sides of a greased 9 inch spring form pan. Chill 1 hour or until firm.
In a mixing bowl, beat cream cheese, sugar, flour, and vanilla until fluffy. Add egg whites; beat on low until just blended. Stir in cream.
Pour the cream cheese filling into the crust.
Bake at 375 degrees for 35-40 minutes or until center is nearly set. Refrigerate overnight.
*I always wrap the bottom of my springform pan in foil so butter doesn't leak out and make a mess*
