I made some tortilla rollups for an appetizer today, Labor Day
8 ounces cream cheese
1 cup sour cream
1 can black beans, drained and rinsed
1 small can of chopped green chilis, drained
1 packet of ranch dressing mix (I chose one that did not say buttermilk)
a handful of shredded cheddar cheese
also some chopped red pepper though I'd eliminate it next time just because it was the only crunchy thing in the roll ups and to me texturally it'd be better without.
I mixed all those ingredients together, spread a thin layer over a tortilla, and rolled them up, stored in a tupperware over night, and cut them into 1 inch pieces the next day. Serve with salsa
