Baked Potato Dip

I planned on making this for the Super Bowl party and I went ahead and made it for Super Bowl snacking. It was good and it's almost gone! If I was making this for a party I would have needed to triple the recipe I think I got the recipe from this blog Time Well Spent Baked Potato Dip 1 carton sour cream (the big one) 1 package ranch dressing mix I cooked a package of bacon and crumbled a few pieces for the dip Handfuls of grated cheddar cheese Combine the ingredients, refrigerate, and eat with rippled potato chips

Key Lime Cheesecake Cheeseball

My husband and I went to the DC Metro Cooking show in the fall and we bought a few items. This cheeseball mix was one of the things we purchased. Its a dessert cheeseball that we ate with graham crackers and nilla wafers. Greek Chicken Wraps

I originally bought chicken to make chicken empanadas for Super Bowl. We had to cancel our party due to the snow. I also had bought cream cheese, tomato, cucumber and feta for a greek layered dip. Instead I put everything together for Greek chicken I started with the creamy chicken and artichokes recipe and tweaked it 1 lb chicken breasts Flour to coat the chicken 1/2 + Chicken broth 4 ounces cream cheese 1/2 cup White Wine Salt & Pepper to taste Minced garlic Juice from half a lemon Container of crumbled feta cheese Sour Cream White vinegar diced tomato diced cucumber Tortillas Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken breasts evenly with salt and freshly ground black pepper. Melt butter in a large nonstick skillet over medium-high heat. Place flour in a shallow dish. Dredge chicken in flour. Chocolate Chip Cookies

Everyone in my house took turns shoveling the driveway. We had a fire in the fireplace and I had hot out of the oven chocolate chip cookies for them. My husband shared the cookies with all our neighbors who were also digging out their driveways I always use the Nestle Chocolate Chip cookie recipe on the bag. I had to mix semi sweet chips with some semi sweet mini chips to have enough chocolate chips. I had just partial bags in my baking bin. Nestle Tollhouse Chocolate Chip Cookies I love this new pan. I bought it at Homegoods. Some of my pans are losing their non stick quality and cooking spray makes cookies brown and crisp on the bottoms and edges.

Quiche

So I've been stuck at home for several days since we have over 2 feet of snow! I have been happily spending my time cooking :) Mini bacon cheddar quiche for breakfast These were delicious. Italian Mac n Cheese

This is a Rachael Ray recipe we have been making ever since saw her do a show in Cleveland Ohio and she said it was one of her favorites (it is not what she made during the cooking demo). Crumb Topped Apple Pie

I used my usual apple pie filling recipe pastry crust 1 cup sugar 1/3 cup flour 1 teaspoon nutmeg 1 teaspoon cinnamon dash dalt 8 cups thinly sliced tart apples (Granny Smith) 3 tablespoons butter then I made a crumb topping for my pie Ingredients Brown Sugar- 1/2 cup Oats- 1/2 cup Chopped Walnuts- 1 small packet Butter- I used too much :( and it made my pie soupy even after cooling it was a little too soupy. I used 1/2 cup butter, please only use 2 tablespoons! Heat oven to 400 degrees bake about 40 minutes. Watch your pie because the crumb topping can burn

schweineschnitzel and kaesespaetzle

We had an Austrian dinner at home last weekend Inspired by watching Tyler Florence's Vienna episode Pork Schnitzel and cheesy dumpling noodles It was soooo good :) The only thing we did differently is how to cook the pork We fried our schnitzel one piece at a time in our wok, didnt lose any breading, and it was so crispy! We didn't follow his recipe for the spaetzle, we made the basic dough, then ended up adding in more flour until we liked the consistency. Then DH did the cheese sauce in a similar way to his mac n cheese method. We did have sauteed onions in the cheesy noodles.

Burritos

These are just some bbq chicken breast that was marinated and cooked with bbq sauce and hot sauce, sauteed corn and black beans with taco seasoning, and mexican cheese wrapped in a flour tortilla. Harris Teeter had a buy one package get two packages free sale on chicken breast that week so I baked a TON of chicken all at once and then looked for some ways to use it up.

Jambasta

I have had this Rachael Ray recipe saved for a long time. I even have printed it out several times thinking I may put it into my meal rotation for the week. I finally got around to trying it. My husband thinks it'd be better to just have regular jambalaya with rice. It was a good dish but we probably wont make it again. Rachael Ray's Jambasta Recipe
