I have been craving Chinese! I order my groceries online and do curbside pickup. I wanted to make my own egg rolls, but I didn't get my egg roll wrappers in the order and they didn't substitute anything. So, I made egg roll in a bowl! They did substitute ground pork with hot Italian sausage, which wasn't too bad in the recipe overall.
Ingredients:
Ground pork
Ginger, minced finely
Coleslaw mix
Green onion, dice and separate whites from greens
Hoisin Sauce
Sriracha Sauce
Asian Sesame Dressing
Uncle Ben's 90 second Jasmine Rice Packet
Toppings:
Peanuts
Crispy Wonton (found with salad toppers)
Prep:
Peel the ginger using a spoon and dice the ginger very finely.
Dice the green onions and keep whites separate from greens.
In a small bowl add the green onion greens with some sesame dressing.
Heat olive oil in a non stick skillet on medium to medium high.
Once oil is hot add ground pork.
Season with salt and pepper.
When the pork is cooked through remove from pan, but leave the drippings.
I sat my ground pork in a colander to drain.
Into the hot pan of pork drippings add the coleslaw mix and green onion whites.
Season with salt and pepper.
When slaw mix and green onion whites have softened add pork back into the pan, add a good dollop of hoisin sauce, a smaller dollop of sriracha sauce, and add the finely minced ginger.
When ginger has softened add in your small bowl of green onion greens with the sesame dressing.
Heat through for a minute.
Toss the jasmine rice packet in the microwave for 90 seconds.
Plate up! I put down rice, then the egg roll mixture, and top with peanuts and wonton strips.
