So I am at a point where I'm unhappy with my weight. Its bathing suit and shorts weather. I turned to my WWs cookbook for some inspiration and decided on chicken with feta sauce. I have no idea if this is healthy but it tasted fine. I havent had Anthony's opinion on it because he isn't home from work.
I used three chicken breasts
sprinkle of balsamic vinegar
sprinkle of ground thyme
olive oil to coat my pan
1/3 cup crumbled feta
1 cup milk
1 tablespoon plus 1 1/2 teaspoons flour
half of a lemons worth of juice
Ground black pepper
dried oregano
cooked orzo
cucumber chunks
Coat the bottom of a pan with olive oil
Place the chicken breasts in the pan
Sprinkle the balsamic vinegar and thyme on the chicken
Cook the chicken through, mine took maybe 8 minutes a side. Cut into your chicken and make sure it's white with clear juices.
Remove the chicken from the pan and put on a plate
Add the flour to the pan stirring it in well so you dont have a lot of lumps of uncooked flour.
Next add your milk. Make sure the temperature is simmering and stir that milk until it thickens, about 2 minutes.
Add your feta cheese and lemon juice and stir until the cheese melts. Mine didn't melt 100% but that was fine with me, the big chunks were smaller after this process and I was HUNGRY.
This is where I seasoned the sauce with black pepper and the oregano.
I added my chicken back into the pan and heated everything together
I plated some orzo, then placed the chicken in the sauce on top of the orzo, around the plate a put the chunks of cucumber. Chicken, feta, and orzo, = cucumber for me personally. The original recipe suggests frozen broccoli, cauliflower, and carrot mix.
