PF Changs

In the frozen food section you will find PF Changs honey chicken.  It doesn't come with any veg.  You simply cook on the stove top and can throw it on rice.  I sauteed diced onion, carrots, and frozen peas on the stove.  Added soy sauce, sriracha, then a touch of sesame oil and lastly uncle Ben's microwave jasmine rice.  A scrambled egg would have made it even more like fried rice.  The rice was maybe better than the PF Changs frozen chicken.  It was a quick meal for someone who didn't want to cook at all.

  This was a Home Chef recipe .  I ended up simplifying it so I can manage dinner on a week night. The brussels were halved, coated in olive oil, salt, pepper and baked in 400 degree oven for about 30 minutes.  After 10 minutes on their own I added the chicken. I coated the chicken in olive oil, salt, pepper, and cooked for a few minutes on each side on the stove top. Added the chicken to the brussels for 10 minutes.  Then topped the chicken with goat cheese and cranberry, popped back in the oven for another 10 minutes. My brussels were great.  The chicken was ok.  Dinner was made and that was all that mattered!

Birthday Fiesta!

It was that time of year.  The celebration of my birth!  I made my chicken burritos and homemade enchilada sauce.   I also made guacamole, but it didn't photograph well because it was made in a green bowl. I prepped all of the burritos a day ahead.  It took about 3 hours.  You aren't a slave to the kitchen for the 3 hours.  You can start things and walk away, like baking the chicken and simmering the enchilada sauce. I baked 3 chicken breasts in the oven that I simply coated in olive oil, salt, and pepper.  The chicken took about 40 minutes.  Internal temp must be 165. I made a package of Spanish rice on the stove. I diced my onions and opened cans. Shredded all my cheeses (half for filling and half for topping) The sauce gets simmered on the stove for an hour. Friday night dinner was bacon, cheddar burgers

 I went to Green Valley to order birthday cupcakes and I wasn't far enough in advance.  While we were there we bought a 4 pack of cheddar, bacon burgers and a few sides for Friday night dinner.  I topped the burgers with cheese, lettuce, onion, (boyfriend had tomato), fried crispy jalapeno salad toppers, and a burger sauce made of mayo, bbq, and hot sauce.  I got the doneness of the burgers perfect.  Boyfriend 145 degrees and mine was 135.  Also the mustard potato salad and the pasta salad from Green Valley were great.  The pasta was as good as mine the week before!

 What to do when pulled pork bbq sandwiches get old?  Make a Mexican pulled pork bowl instead! Rice, pulled pork that I reheated in taco seasoning with water on the stove (just follow the taco seasoning packet directions), corn, black beans, cheese, salsa and sour cream.

  I made pulled pork in the crockpot for Friday night dinner.  It was two pork tenderloins in root beer on low all day until pork fell apart.  Then you pull the pork, pop it back in the slow cooker and add bbq sauce. I made my famous sweet and spicy coleslaw and I made a pasta salad with good seasons italian mix plus some green pepper, cherry tomato, and mozzarella pearls.

Home Chef Elotes Burger

This recipe was so good I'd make it again and make it for friends and family!  So so so good! While prepping everything for the burger, crack the oven up to 425 and throw in some potato wedges that have been coated with olive oil, salt, and pepper. Butter and toast the buns.  They usually send a really nice soft brioche type bun. Heat a skillet with olive oil and add corn.  Heat for a few minutes then remove from stove.   To the ground beef add some chili powder, salt, pepper and form patties.  Cook evenly in a skillet. Dipping sauce for the fries was enchilada sauce mixed with mayo. Add some enchilada sauce to the corn after cooking. Time to stack a burger! Bottom bun, hamburger patty, guacamole (they sent premade but it lacked flavor and needed lime badly), corn, cotija cheese, fresh chopped cilantro, top bun.  

Morningstar Farms

 I've been eating these Morningstar Farms buffalo 'chicken' nuggets for over 10 years.  I throw them in the air fryer and make them into a wrap with buffalo sauce and blue cheese dressing drizzled on them.  I like to add cheese and lettuce if I have it to the wrap.
