This recipe turned out awesome and it makes me want to try some meatza versions.
Ingredients:
1 package ground chicken
2 eggs, whisked
seasonings: salt, pepper, italian seasoning, onion and garlic powder
flour
panko breadcrumbs, almost a whole box
avocado oil spray
favorite sauce
favorite cheese: provolone, mozzarella, and shredded parmesan
Tools: parchment paper and a sheet pan (2 pans is better)
Directions:
Mix the ground chicken and seasonings in a bowl
Lay out parchment paper on sheet pan and sprinkle it with flour
Place seasoned ground chicken on the parchment and smush as flat as possible into an oval shape
Brush the chicken with egg wash
Cover with breadcrumbs
Spray until hydrated with the oil
Place another sheet of parchment paper on top and carefully slip onto another sheet pan
Remove top parchment paper
Brush chicken with egg wash, top with panko, spray with oil
Bake at 450 for 15 minutes. Keep an eye on it. Ours did start to burn on the edges
Add sauce and cheese and broil a few minutes
Cut into squares and serve. We added a little fresh basil to top it off
