My parents had leftover Easter ham and gave some to me. I made this low calories ham and bean soup from Taste of Home! It lasted me a week and I even gave 2 servings to my boyfriend.
Ingredients:
diced, cooked ham
2 tablespoons butter
chopped onion
2 garlic cloves minced
2 cans of kidney beans
3 cups pho broth
2 cups water
1 potato diced
celery diced
carrots diced
salt
black pepper
dashes of hot sauce
In a large pot, melt butter, and sautee the onions and then add garlic. Add the rest of the ingredients and bring to a boil. Cover pot with lid and simmer for at least 30 minutes.
