Thanksgiving

 I had Thanksgiving at the boyfriend's cousin's new house.  We were looking for a house at the same time last year.  They found one first though!  I wanted to take a few things.  


I made Buffalo chicken dip and took crackers, chips, and celery to dip in it.  This made way too much!  I would halve the recipe next time.


Buffalo Chicken Dip:

2 large cans of chicken

1/2 cup of ranch dressing

1/2 cup of wing sauce

1 container of blue cheese crumbles (save some for topping)

1 8 ounce block of softened cream cheese

1 8 ounce package of shredded cheddar cheese (save some for topping)


Mix all ingredients together and then top with reserved blue and cheddar cheese.

I put the mixture into a throw away brownie pan with a lid so I wouldn't have to worry about dirty tupperware.

Bake in the oven at 350 degrees for 20-25 minutes.




Next I made homemade cranberry sauce because my boyfriend said he had never had it before.


Habanero Cranberry Sauce:
1 8 ounce package of whole cranberries
1 cup white sugar
1 cup water (a little less because I added the OJ and then filled the cup with water)
1 orange, zested and juiced
1 habanero chile seeded and diced


First put the OJ and water on the stove with the white sugar.  Cook on medium heat stirring constantly until the sugar is dissolved.   Then add everything else.  The cranberries will pop on the stove.  After 10 minutes the sauce is done.  I blended mine a bit with an immersion blender, but you can leave it chunky.




Lastly I made a green bean casserole.  I've never made one before.  I wish I hadn't made one.  There ended up being three on the table :( and boyfriend said he didn't like mine.  


Green Bean Casserole:

I used 1 pound of french blanched green beans that I trimmed.  I now know you are supposed to only use canned green beans.

1 can of cream of mushroom soup.  I got fancy and used cream of mushroom soup that was garlic.  Again I should have stuck with the regular cream of mushroom soup.

1 teaspoon soy sauce

1/2 cup milk

French's fried onions.  6-9 ounces.  Reserve some onions for topping!

dash of pepper


Stir everything together and put in a sprayed casserole dish.

Bake at 350 degrees for 25 minutes. 

Top with the reserved onions and pop back in the oven for an addition 5 minutes.

Low iodine taco

Taco seasoning Ground Beef Red Onion, diced Garlic, minced Lettuce, shredded Avocado Lime juice Tomato, diced 1 Jalapeno, diced No salt salsa Unsalted tortilla chips, I used Guiltless Gourmet Taco Seasoning 2 teaspoons cumin 1/2 teaspoon oregano 1/2 teaspoon non iodized salt 1 teaspoon pepper 1/2 teaspoon onion powder 1/2 teaspoon cayenne 1 teaspoon corn starch Guacamole 3 avocados juice of 1 lime 1/4 of a diced red onion diced jalapeno Mix together taco seasoning ingredients and add to 1 pound ground meat, minced garlic, and 3/4 of diced onion. Brown meat, garlic,b and onions until cooked through. Put no salt added tortilla chips in the bottom of a bowl, meat mixture, salsa, lettuce and guacamole

Low Iodine Diet

I have to be on this low iodine diet for a while. At least until the end of February. You will be seeing some new recipes coming as my husband and I try to cook things to fit this diet. More info can be found here Thyroid Cancer Survivor Association I don't have thyroid cancer. I do have to have the same treatment as a thyroid cancer patient would have. Don't worry! I'll be fine in a few months. Some of the guidelines include -No seafood. no problem since I don't eat any -No soy products. no soy sauce, no tofu, no soy beans. sadness :( -No processed foods. The frozen meals I like to eat at lunch at work are now OUT. AHHHHHHHHHH and so are things like canned soup. Good bye tomato soup in a can -No dairy. Whatever is used to clean the cow milking equipment has iodine. how will I like without milk, cheese, and yogurt. it really puts a damper on my breakfast options. -Only fresh bread. I just threw a loaf of sliced wheat bread in the freezer for when the diet
