Pasta Salad

Rotini noodles
Grape tomatoes, halved
Red pepper, diced
Onion, diced
Broccoli, diced
Small mozzarella balls
Mini pepperoni
Italian Good Seasonings, mixed with balsamic vinegar
Prepared pesto, a dollop incorporated into the dressing

Cook noodles per instructions, cool completely before adding to vegetables, meat, and cheese.
Add about half of the prepared dressing.  Let the salad sit overnight.  The noodles will absorb some dressing.  Add the rest of the dressing before serving.

Pigs in a Blanket

Pack of 5 Hebrew National all beef hot dogs
1 can crescent roll dough
Cheese if desired
Toppings like various mustards and ketchup

Heat oven to 350
Use paper towels and dry the hot dogs to help keep dough stuck on them.
Roll out the crescent dough into one large rectangle
Cut into 8 long strips and then cut again in half
Cut the hot dogs into thirds
I sprinkled half of the crescent dough with some shredded cheese before rolling.  Other bloggers suggested using American cheese slices.  
Wrap each piece of hot dog in dough
Place on a pan lined with parchment paper
Cook for about 12 minutes
Serve with hot dog toppings of your choice

BBQ Beef
1 lbs ground beef
1 diced onion
1 1/2 cup ketchup
2 tablespoons mustard
2 tablespoons brown sugar
2 tablespoons Worchestershire sauce
2 tablespoons lemon juice
2 tablespoons apple cider vinegar
salt, pepper, garlic powder
Rolls

In a large pot, brown beef and onions.
Season with salt, pepper, and garlic powder.
Drain beef mixture and return to pot.
Add all other ingredients, turn heat to medium and heat through.
Keep on stove at a low simmer for people to make sandwiches.

Jalapeno Popper Dip
2 packages softened cream cheese
1 cup mayo
1 + cup shredded cheese
4 ounces canned diced green chili pepper
4 ounces jarred diced green jalapeno pepper

Turn oven on to 350 degrees
Mix all ingredients together in a bowl
Transfer to a baking dish
Bake for about 30 minutes.
The dip should come out bubbling.
Serve with crackers, chips, etc.  I like the pita crackers the best.

Taco seasoning Ground Beef Red Onion, diced Garlic, minced Lettuce, shredded Avocado Lime juice Tomato, diced 1 Jalapeno, diced No salt salsa Unsalted tortilla chips, I used Guiltless Gourmet Taco Seasoning 2 teaspoons cumin 1/2 teaspoon oregano 1/2 teaspoon non iodized salt 1 teaspoon pepper 1/2 teaspoon onion powder 1/2 teaspoon cayenne 1 teaspoon corn starch Guacamole 3 avocados juice of 1 lime 1/4 of a diced red onion diced jalapeno Mix together taco seasoning ingredients and add to 1 pound ground meat, minced garlic, and 3/4 of diced onion. Brown meat, garlic,b and onions until cooked through. Put no salt added tortilla chips in the bottom of a bowl, meat mixture, salsa, lettuce and guacamole

Low Iodine Diet

I have to be on this low iodine diet for a while. At least until the end of February. You will be seeing some new recipes coming as my husband and I try to cook things to fit this diet. More info can be found here Thyroid Cancer Survivor Association I don't have thyroid cancer. I do have to have the same treatment as a thyroid cancer patient would have. Don't worry! I'll be fine in a few months. Some of the guidelines include -No seafood. no problem since I don't eat any -No soy products. no soy sauce, no tofu, no soy beans. sadness :( -No processed foods. The frozen meals I like to eat at lunch at work are now OUT. AHHHHHHHHHH and so are things like canned soup. Good bye tomato soup in a can -No dairy. Whatever is used to clean the cow milking equipment has iodine. how will I like without milk, cheese, and yogurt. it really puts a damper on my breakfast options. -Only fresh bread. I just threw a loaf of sliced wheat bread in the freezer for when the diet
