I asked my friend Rebecca if she could have any food over the weekend what would it be. She mentioned Greek. I made a Home Chef recipe on my own. Chicken with a spinach feta dip, puff pastry, and squash on the side.
Chicken breasts, which I cut in half to make them less thick
Softened cream cheese
Crumbled feta
Chopped spinach, sauteed in olive oil with minced garlic and diced red onion
Salt and pepper
Diced squash
Chimichurri seasoning
Puff pastry cut into squares and scored, not all the way through!
Heat oven to 450
Spray a foiled lined sheet pan with cooking spray
Brown chicken evenly on both sides for about 3 minutes. It will finish cooking in the oven.
Add sauteed spinach, garlic, and red onion to a bowl with the softened cream cheese, feta, salt and pepper. Stir to combine.
Place chicken on the sheet pan and top with the spinach mixture.
Place the scored puff pastry squares on the sheet pan.
Back together in the oven about 12 minutes. The puff should be golden brown.
Sautee the diced squash with some olive oil, salt, pepper. Stir in the chimichurri seasoning at the end.
Serve as shown!
I put the leftovers over some rice for lunch and it was delicious.
