Crispy Ground Chicken Parmesan



 

Ingredients:

1 lb ground chicken

Seasonings like:  onion powder, garlic powder, Italian, oregano, basil, salt, and pepper

Panko breadcrumbs

Favorite pasta sauce

Favorite cheeses like:  sliced provolone, shredded mozzarella, shredded parmesan

2 eggs, beaten with 1 tablespoon water

avocado oil spray

flour


Special tools:  Parchment paper


Heat oven to 450

Lay parchment paper on a sheet pan and sprinkle flour on it

Mix ground chicken and seasonings

Smoosh chicken into a large thin oval on the parchment paper

Sprinkle chicken with flour

Brush egg over the flour

Sprinkle panko all over coating well and then use your hands to press the panko into the chicken.

Spray panko with avocado oil to moisten

Flip the chicken over.  I used a second piece of parchment on a sheet pan to do this

Repeat flour, egg, panko, and avocado oil steps.

Bake in the oven until brown and crispy.

Add sauce and cheese and place back in the oven until melted.

Cut the chicken parm into pieces.

Serve with pasta or use the cut up pieces for a chicken parm sandwich,

Crockpot Salsa Chicken

This was easy, done in less than 4 hours, and it tasted good Slow-Cooker Salsa Chicken Ingredients 4 boneless, skinless chicken breasts 1 cup salsa (I used a whole jar of Pace Pico de Gallo) 1/2 package taco seasoning 1 can cream of chicken soup (condensed) 1/2 cup reduced fat sour cream 1 can black beans, rinsed A few handfuls of frozen corn Directions Add chicken to slow cooker. Sprinkle taco seasoning over chicken. Pour salsa and soup over chicken. Add black beans and corn I stir it all together Cook on high for about 3.5 hours and cut chicken to check for doneness. Remove from heat and stir in sour cream. The first night we ate this mix with these corn tamales we buy, that have no filling. They are just cornbread. Mini Naan Pizzas

I made my favorite pizzas.  Arugula with pesto and balsamic and pepperoni with hot honey.  Quick and easy Friday night.  I wish I had prosciutto for the arugula one, but it was still great.
