BBQ (AKA Sloppy Joe)

  This is boyfriend's grandma's recipe.   1 lb ground beef half a sweet onion, diced 3/4 cup ketchup 1 tablespoon mustard 1 tablespoon apple cider vinegar 1 tablespoon brown sugar 1 tablespoon lemon juice 1 tablespoon worchestershire sauce In a large pot, brown the beef and sautee the onion with some olive oil.  Next add the other ingredients until heated through.  Serve with rolls of your choice.  This dinner comes together fast.  You can keep it in a crockpot for a party too.  

Turkey Meatball Stroganoff

  INGREDIENTS: 1 bag egg noodles 2 small packages brown mushrooms 1 onion, diced 1 package softened cream cheese 1 8 ounce sour cream 16 ounces Chicken broth 1 lb ground turkey 1 egg, beaten 1/3 cup panko bread crumbs 1/3 cup grated parmesan 1/2 teaspoon garlic powder 1/2 teaspoon dried oregano olive oil for brushing the meatballs salt and pepper parsley for garnish Prepare Noodles per packaging.  THE SAUCE: In a saucepan heat chicken broth with mushrooms and onion until they are softened.   Stir in cream cheese and sour cream and remove from heat. THE MEATBALLS: Preheat the oven to 375 degrees. In a bowl combine ground turkey, egg, panko, parmesan, garlic powder, oregano, some salt and pepper to taste.  Roll into about 20 meatballs.  Use a sheet pan, covered in foil, and sprayed with cooking spray.  Brush the tops of the meatballs with olive oil.  Bake in the oven for 15 minutes, until internal temperature reads 165.   In bowls place no...

Banana Pudding

  I make Paula Deen's Not Yo Mama's Banana Pudding recipe. This year the chess cookies had fun holiday designs! INGREDIENTS: 1 container of thawed cool whip 1 can of condensed milk 1 package of softened cream cheese 1 package of instant french vanilla pudding 2 cups milk 2 bags of chessman cookies (I'd get 3 because sometimes there are broken ones) 6 Bananas, sliced into coins DIRECTIONS: In a bowl combine milk and pudding mix.  Set off to the side. In a stand mixer combine cream cheese and condensed milk. Fold in the cool whip. Stir pudding into stand mixture mix. Place a layer of cookies in the bottom of a glass casserole dish. Add a layer of banana. Top bananas with cool whip/pudding mixture. Top with the final layer of cookies. Keep chilled in the fridge.  Make day of because the bananas turn brown quickly.  

Sugar Cookies with Royal Icing

  I use Betty Crocker's Sugar cookie mix. Always chill your dough or cookies will spread! To make royal icing I use Wiltons meringue powder.   You need the meringue powder, water, and powdered sugar.  At least 1 pound of powdered sugar. Outline cookies first. Then fill with icing. I like to use gel food coloring to color my icing. Use sprinkles right away because icing does harden.

Snowflake Pizzas

  Preheat oven to 400 degrees Thaw sheets of puff pastry dough Cut into shapes with a cookie cutter Top with pizza sauce, cheese, toppings Bake for 10-12 minutes

Oreo Truffles

  32 oreos crushed in a food processor. 1 package of softened cream cheese added to the food processor with the crushed cookies. Mixture should look like mud when combined. Take small spoonfuls of oreo mixture and put on a sheetpan. Chill in the freezer. Roll into balls. Create a double boiler with a large pan of water under a smaller pan with candy melt sitting on top. Use a toothpick to dip oreo ball into the candy melt. Place on a sheetpan with wax paper and sprinkle with holiday sprinkles right away. Chill the oreo truffles in the freezer until ready to eat. Let thaw for a few minutes before serving.

Snickerdoodles

  Ingredients: 1 sticks of soften butter 2 eggs 2 teaspoons vanilla 2 3/4 cups flour 2 teaspoons cream of tartar 1 teaspoon baking soda 1/4 teaspoon salt a few dashes of cinnamon in the dry mixture For Rolling: 3 tablespoons sugar 3 teaspoons cinnamon Directions: Preheat oven to 350 degrees. In a stand mixer, cream the butter and sugar together.  Then gently mix in the eggs. In a separate bowl combine all the dry ingredients. With the mixer on low add dry mixture a little at a time until combined. Chill the dough and cookie sheets in the fridge. In a small bowl stir together the sugar and cinnamon for rolling. Make small balls of dough and roll in the cinnamon sugar. Bake cookies for 10-12 minutes, cool for 2 minutes, then transfer to cooling rack.

Apple Braid

  INGREDIENTS: Puff pastry sheets, thawed 1 egg water 3 Granny Smith apples, diced 1/4 teaspoon salt 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 2 tablespoons sugar 1 tablespoon lemon juice 1 tablespoon flour DIRECTIONS: Preheat the oven to 400 degrees Smoosh edges of thawed pastry sheets to form one large rectangle. Place on a silpat.  The filling can overflow and make this very hard to remove from a pan.  You can place it on parchment paper instead. In a saucepan combine apples, salt, cinnamon, nutmeg, sugar, lemon juice, and flour until apples have softened.   Let filling cool a bit. Spoon filling down the center of the puff pastry. Take a knife and cut slices into both sides of the puff pastry forming ribbons. Fold the ribbons over the filling making a braid. Tuck the end of the braid in well.  I usually have to trim some excess puff pastry dough off. In a small bowl combine the egg and about a tablespoon water.   With a fork whisk them together...

Grilling on a warm day

 We had some 70 degree days in November and I wanted to celebrate summer for one last time.  I bought ribeye and t bone steaks and invited our friends over.  I also had mushrooms, asparagus, baked potatoes, and salad.  This photo is actually round 2 of the eating so some of the food was already gone.  

Taco Mac

  Boiled pasta of your choice Ground beef, I used a sausage roll.  Browned 1 can black beans, drained Shredded cheddar cheese 1 package softened cream cheese 1 package of taco seasoning.   Onion, diced 1 can diced green chilis Boil pasta and reserve 1 cup of the water Brown the ground beef with the diced onion, add taco seasoning and however much water the packet suggests to add. Add the cream cheese, stir to combine, add reserved pasta water as needed to thin the sauce. Stir in the beans, chilies, and diced tomatoes. You could throw in a can of drained canned corn if you have it. Sprinkle in as much cheddar cheese as you want.

Old Stein, Happy Anniversary to me

We bought a beast platter at Old Stein.  It had a wild boar leg, 7 sausages, chicken schnitzel, a pork chop, red cabbage, saurkraut, and a few baked apple slices.  It was so much food, but we didn't want to pass up the opportunity to try it.    

Mushroom Ramen

  We have made this mushroom ramen recipe from Hello Fresh before.  I did add a protein, ground turkey, and I made my ground turkey meatball recipe.  This was so good!

Rosenfeld's Jewish Deli

We headed to the beach with Maple and Penny.  We had to have Rosenfeld's for lunch because they have decided to close their Ocean City MD location!  You can still visit the DE ones.  Boyfriend had pastrami and corned beef and I had turkey reuben.  The sandwiches are expensive, but huge.  We ate half for lunch one day and the other half the next day.  YUM  

Butterbeer Cupcakes

  We went to the Wizarding day in old Ellicott City and bought a jar mix for butterbeer cupcakes.  These turned out very good and made so many!  We made them in a regular muffin tin but they were supposed to be mini.  We had almost 24 regular sized cupcakes!  

Crockpot Chili

2 cans tomato sauce 2 cans kidney beans, drained 1 green pepper 1 jalapeno 1 onion 1 lb ground beef, browned 1 packet chili seasoning Stir all together and cook in crockpot on low for about 4 hours.   Add any toppings you like.  I do cheese, sour cream, hot sauce, and tortilla chips.  The boyfriend likes his with cornbread.  

The famous potato soup by Lindsey

Topped with green onions, bacon, and sour cream.   There is so much dairy in this soup!  The recipe is here 4 large baking potatoes (baked and scooped out. you can use the skins for something else) 6 cups milk 3/4 cup flour 3/4 cup butter 2 t salt 2 t pepper 1 t garlic powder 4 green onions 1 cup cheddar cheese 12 strips of bacon 8 oz. sour cream I suggest prepping everything first as this recipe goes pretty fast. Chop your green onions (3 for soup, 1 for topping later), shred your cheese, fry and chop your bacon. In a HEAVY bottomed pot melt your butter, then add your flour and whisk until it's smooth and bubbling. Slowly whisk in milk. When bubbling, turn to low and add salt, pepper, green onions, garlic, bacon, and cheese. Add the sour cream just before finishing. Top with extra sour cream, cheese, and bacon, or however you like it.

Turkey burgers with mashed potatoes and homemade pickles

 My niece made these pickles :)   Turkey burgers have salt, pepper, and diced onions mixed in. Mashed potatoes have butter, milk, garlic powder, salt, pepper.

Sheet pan Feta Spinach Gnocchi

Preheat oven to 400 degrees F. Place a bag of pre washed spinach on a foil lined sheet pan. The first time I made this I used the tomatoes whole and the second time I cut them in half.  I think it's easier to eat them when they are cut in half. Cut the tomatoes and sprinkle on top of the spinach. Cut up some flavored chicken sausage and sprinkle on top of the spinach. You can add cut up mushrooms here.   Drizzle everything well with olive oil, add a bit of pepper and Italian seasoning. Add a few dollops of pre made pesto. Use tongs and mix everything up well. Put the block of feta in the center of the pan. Sprinkle the feta with a bit of Italian seasonings too. Bake in the oven for 30 minutes. While the sheet pan is in the oven prepare the gnocchi as the package directs.  The first time I made gnocchi that had wheat flour and I boiled them for a few minutes and they were fine.  The second time I had gluten free and they made mashed potatoes when in the boiling w...

Rib Night

  We had 'family' dinner Friday which means the boyfriend and my friends.  I made collard greens for the first time, sweet and spicy coleslaw which was maybe too spicy this time, corn on the cob, mac n cheese, cornbread, water melon, and a lemon cake for dessert! BBQ PORK RIBS Rub Ingredients: * 1 1/2 cups dark brown sugar * 1 1/4 cups sugar * 1/2 cup salt * 1/4 cup ground black pepper * 1/4 cup paprika * 2 to 4 slabs baby back ribs *** to add some heat try 1-2 tablespoons cayenne *** Directions: Combine all the ingredients for the dry rub in a mixing bowl. Rub the ribs with the dry rub. Lay on a doubled sheet of aluminum foil. Wrap ends over first, then fold up sides and crinkle tightly closed around rack (as little air as possible, without tearing the foil). Let marinate in refrigerator for 8 hours or overnight. Wegmen's Chicken Parm

 Chicken Parm from Wegmen's with angel hair pasta and a tomato sauce I added peppers, onion, italian seasoning, and mild italian sausage too.  I tried very hard to re crisp the chicken in the air fryer and it never quite worked :( The chicken parm comes alone with no pasta or anything.  Family package of 4 was $26

Turkey Burgers

  I made 6 small turkey burgers out of 1 package of ground turkey.  I just added seasoning and diced onions.

Vanilla pudding chocolate chip cookies

 I made this recipe to take to the beach.  It said it made soft cookies.  They were and there were so many chocolate chips I think I'd cut back the next time!  I don't know why the recipe link says whole wheat.  The ingredients used regular all purpose flour.

Mushroom Shepherd's Pie

BLT with dijon dill potato salad

To bowl with potatoes, add mustard, sour cream, mayonnaise, a squeeze of lemon juice, and as much dill as you like. Toss to combine. Season with salt and pepper.
